You will need: 700 g pumpkin, 150 g hard cheese, 50 g butter, 3 cloves garlic, 1 bunch parsley, 100 g breadcrumbs, 300 ml 30% cream, 2 tsp Provence herbs, ground chili pepper, nutmeg, spices, 1 tbsp starch.
Preparation: Mince the garlic and fry for 1 minute in butter. Add breadcrumbs and fry for another 3 minutes, stirring. Remove from heat, add all spices, herbs, and chopped parsley. Grate the cheese and mix 2/3 of the cheese with starch.
Cut the pumpkin into slices 4-5 mm thick. In a baking dish, layer the pumpkin, season with salt, and sprinkle with a third of the breadcrumbs. Then – half of the cheese with starch. Again, pumpkin, breadcrumbs, and cheese with starch. And then again pumpkin and breadcrumbs, and pour cream over everything.
Cover with foil and bake the gratin in the oven for 40 minutes at 180 degrees Celsius. Remove the foil, sprinkle the gratin with the remaining cheese, and bake for another 10 minutes.
