How to Make Bubble Tea Pearls
You won't be able to make all types of pearls yourself. Some are better bought ready-made, but there's still plenty of room for experimentation at home.
Berry Pearls for Bubble Tea

You will need: 10 tbsp berries, 6 tbsp sugar, 4 tbsp water, 12 tbsp starch.
Preparation: Blend the berries, sugar, and water until smooth. Strain the mixture through a sieve and combine the resulting puree with half of the starch. Microwave the mixture for 1 minute, stirring every 15 seconds.
Add the remaining starch, mix thoroughly again, and roll into small balls. Boil them in simmering water for 20 minutes, remove from heat, let stand for another 7-10 minutes, then rinse. You can then immediately use these pearls for making bubble tea.
Caramel Pearls for Bubble Tea

You will need: 100 g ready-made tapioca pearls, 250 g brown sugar, 1.1 l water.
Preparation: Boil a syrup from sugar and 100 ml of water; it should not be too thin. Bring 1 liter of water to a boil, add the tapioca pearls, and cook for 30 minutes over high heat, stirring occasionally. Drain them in a colander and rinse with cold water. Then, add the pearls to the sugar syrup, bring to a boil over low heat, and cook for another 10 minutes. Done!
Popping Watermelon Pearls for Bubble Tea

You will need: 150 g watermelon pulp, 100 ml green tea, 20 g sugar, 0.5 tsp sodium alginate, 0.5 tsp sodium citrate, 500 ml water, 2.5 tsp calcium chloride.
Preparation: Blend the watermelon pulp, green tea, and sugar until smooth. Add sodium alginate and sodium citrate, and blend again. Cover with film and refrigerate for 2 hours.
Mix water and calcium chloride. Using a large syringe or any other method, add the watermelon mixture to a small round measuring spoon or suitable mold. Dip into the calcium chloride water and carefully form pearls by shaking the measuring spoon. Store the finished pearls in plain water and use only for making cold bubble tea.
Tapioca Pearls for Bubble Tea

You will need: 1 cup tapioca pearls.
Preparation: Boil about 4 cups of water, add the tapioca pearls, and cook for 15-20 minutes. When the pearls start to darken, remove them from heat, cover, and let stand for another half hour – they will darken completely and shrink in volume. Store cooked tapioca pearls in water or syrup to prevent them from sticking together.
Tapioca Starch and Cocoa Pearls for Bubble Tea

You will need: 120 g tapioca starch, 2 tbsp cocoa, 50 g brown sugar, 100 ml water, sugar syrup for cooking.
Preparation: Mix half of the tapioca starch with cocoa. Cook a smooth syrup from water and brown sugar, stirring. Add the starch with cocoa, mix thoroughly again, continue heating and stirring until smooth.
Add the resulting mixture to the remaining starch and knead into an elastic dough. Form into balls, boil them in simmering sugar syrup for another 30-40 minutes over low heat, stirring regularly.
Fruit Pearls from Corn Starch for Bubble Tea

You will need: 120 g corn starch, 80 g brown sugar, 2 medium mangoes or other fruits.
