Many people in our latitudes don't eat fish for years because they simply don't know how to cook it. After all, even frying and baking it needs to be done correctly to preserve its taste and beneficial nutrients. So, here's a large collection of recipes for the best fish dishes!
1. Fish in Sour Cream
A festive and aromatic dish for every day.
You will need: 400 g fish, 4 tbsp sour cream, 2 tbsp Parmesan, 1 tomato, dill, green onions, garlic, and spices.
Preparation: Finely chop the peeled tomato, green onions, dill, and garlic. Mix them with sour cream and grated Parmesan. Season the fish fillet with spices, arrange in baking dishes, and pour the sauce over. Bake for about 20 minutes at 180 degrees Celsius.
2. Fish with Tomatoes and Olives
Feel free to experiment with spices – the taste will change dramatically.
You will need: 1 kg fish, 500 g tomatoes, 1 can of olives, 3 cloves of garlic, 50 g flour, spices, olive oil.
Preparation: Peel the tomatoes and cut them into medium cubes, mince the garlic, and slice the olives into rings. Dredge the fish fillet pieces in flour mixed with spices, lightly fry, and set aside on a plate. Sauté the garlic with tomatoes and olives in the fish oil for about 10 minutes. Season, return the fish, and let it simmer in the sauce for another 7 minutes.
3. Fish in Napa Cabbage
Actually, the leaves can be any: from grape or banana leaves to regular white cabbage.
You will need: 600 g fish, 6 large Napa cabbage leaves, 2 tsp miso paste, spices.
Preparation: Spread miso paste with spices over the fish fillet and set aside. Cut off the thick part of the leaves, lightly pound them, and boil for a couple of minutes in boiling water. Cool the leaves, arrange three overlapping, and wrap the fish like an envelope. Bake for 20 minutes at 180 degrees Celsius or steam for 15 minutes.
4. Fish in Tangerines
Use red fish – and you'll get a luxurious festive dish!
You will need: 1 kg red fish, 100 ml vodka, 6 tangerines, 5 tbsp honey, spices.
Preparation: Squeeze juice from 4 tangerines and mix it with vodka, honey, and spices, then reduce the sauce by half. Add 2 tangerines sliced into rounds and cook for another 5 minutes. Place the fish on parchment paper, brush with tangerine sauce, top with tangerine slices, and bake for 20 minutes at 180 degrees Celsius.
5. Fish with Vegetables
Bake the fish in a parchment or foil packet.
You will need: 500 g fish, 2 zucchini, 3 bell peppers, 2 tomatoes, cilantro and parsley, garlic, 1 chili pepper, spices, olive oil.
Preparation: Grate the tomatoes and mix with chopped herbs, garlic, chili, 2 tbsp oil, and spices. Place the fish fillet in the marinade, leave for half an hour, and meanwhile, cut the vegetables into large sticks. Place the fish with marinade over the vegetables, wrap in a packet, and bake for 25 minutes at 180 degrees Celsius.
6. Fish with Citrus Butter
Another very simple but interesting recipe for baked fish.
You will need: 1 whole fish (2 kg), 200 g butter, 2 oranges, 2 lemons, and 2 limes, olive oil, spices.
Preparation: Slightly warm the butter and mix it with 3 tsp citrus juice. Add zest and spices to taste, wrap the butter in cling film, and put it in the freezer for 20 minutes. Clean the fish, pour the remaining citrus juice over it, and season inside and out.
Place it on parchment paper, arrange citrus slices next to it, drizzle with olive oil, and bake for 25 minutes at 200 degrees Celsius. Before serving, place slices of butter from the freezer on top.
7. Fish Patties
An excellent recipe for a dish made from small salted fish.
You will need: 500 g small fish, 3 eggs, 3 tbsp flour, 1 bunch green onions, spices.
Preparation: Clean the fish, chop very finely, and place in a bowl. Add chopped green onions and beaten eggs, season the fish mince, and mix with flour. Spoon the patties onto a hot pan.
8. Fish and Shrimp Casserole
This dish is easy to prepare but turns out very refined.
You will need: 400 g fish, 10 large shrimp, 4 eggs, 125 g sour cream, 150 g tomato sauce, 1 tbsp breadcrumbs, spices.
Preparation: Whisk the eggs with sour cream, tomato sauce, and spices. Cut the fish and parboil in salted water for 2-3 minutes. Add it with peeled shrimp to the sauce, mix, and transfer to a breadcrumb-dusted baking dish. Bake for 40 minutes at 180 degrees Celsius.
9. Salad with Fish and Pickled Onions
An appetizing and delicious fish salad that even a novice cook can easily prepare.
You will need: 500 g fish, 2 eggs, 1 onion, spices, 2 tbsp vinegar, 50 ml sour cream, 50 ml mayonnaise.
Preparation: Boil the fish, debone, and break into pieces. Separately boil the eggs and cut into large cubes or slices. Marinate the onion rings in boiling water with vinegar and spices, cool, and drain. Mix the ingredients and dress with a mixture of sour cream and mayonnaise with spices.
10. Crispy Baked Fish
There's no oil here, so the recipe is diet-friendly.
You will need: 800 g fish, 100 g breadcrumbs, 1 egg white, salt, herbs, pepper.
Preparation: Mix breadcrumbs with spices and separately whisk the egg white until foamy. Cut the fish into pieces, mix it with the egg white, coat in breadcrumbs, and bake on parchment paper for 20-30 minutes at 180 degrees Celsius.
11. Fish in a Salt Crust
The dish only seems complicated, but in reality, it's elementary!
You will need: 1 kg fish, thyme, garlic, 2 kg coarse salt, 1 kg fine salt, 2 eggs.
Preparation: Mix both types of salt with egg whites and water to create a pliable mixture that can be shaped. Clean the fish, stuff with thyme, garlic, and spices. Place foil on a baking sheet, a 1.5 cm layer of salt, and the fish on top, cut-side down. Cover it with the remaining salt and seal thoroughly so there are no gaps. Bake the fish for about 40 minutes at 200 degrees Celsius.
12. Fish Julienne
Red fish is best suited here, but the choice is yours!
You will need: 300 g fish, 1 onion, 1 tbsp flour, 150 ml 15% cream, 150 g cheese, herbs, and spices.
Preparation: Sauté the chopped onion in a mixture of vegetable and butter with spices. Grate the cheese, and cut the fish into medium cubes. Add the fish to the onion and fry for another couple of minutes, then sprinkle with flour and pour in the cream. Cook until the sauce thickens, season, spoon into ramekins, and sprinkle with herbs and grated cheese. Bake for 7-10 minutes at 180 degrees Celsius.
13. Marinated Fish in Tomato Sauce
A very easy recipe that even beginners can replicate.
You will need: 1 kg fish, 2 tbsp salt, 1 kg onions, 0.5 cup sugar, 1 cup tomato sauce, 0.5 cup 9% vinegar, 0.5 cup water, 1 cup vegetable oil.
Preparation: Clean and rinse the fish, cut it into small pieces. Finely slice all the onions into half-rings and spread them in an even layer in a thick-bottomed pot. Then add a layer of fish and another layer of onions. Mix all the marinade ingredients and pour into the pot. Let the fish simmer over low heat for 3-3.5 hours. Optionally, add bay leaf and peppercorns, and leave for another 40 minutes.
14. Fish in Kefir
Another simple homemade fish recipe inspired by Jamie Oliver.
You will need: 1 kg fish, 700 g potatoes, 400 ml kefir, 20 g fresh ginger, 3 cloves of garlic, 1 tbsp turmeric, dried mint, chili.
Preparation: Mix kefir with spices, grated ginger, and crushed garlic, pour the sauce over the fish, and refrigerate for half an hour. Boil the potatoes until slightly soft, and cut into large pieces. Place the potatoes and fish in a baking dish, pour the remaining marinade over, and bake for about 20-30 minutes at 180 degrees Celsius.
15. Caramelized Fish
An unexpected but very interesting Asian-style fish recipe.
You will need: 350 g fish, 1 tbsp starch, 2-3 cm ginger, 2 tbsp vegetable oil, 1 tbsp chopped green onions, 2 tbsp soy sauce, 2 tbsp water, 1 tbsp sugar, 1 tsp sesame oil, white pepper.
Preparation: Cut the fish into medium-sized pieces and coat in starch. Mix soy sauce, water, sugar, sesame oil, and white pepper. Fry ginger strips over high heat, remove from the pan, and in the same oil, fry the fish until golden. Pour in the sauce and reduce heat when it boils. Continue cooking until the fish caramelizes, then sprinkle with ginger and green onions.
16. Salad with Fish and Cucumbers
Cucumbers can be fresh or pickled.
You will need: 250 g fish, 2 cucumbers, 400 ml brine, 3 eggs, 1 red onion, 150 g sour cream, 1 tsp horseradish, 0.5 tsp mustard, 0.5 bunch dill, salt.
Preparation: Cut the fish into pieces and boil until cooked in any brine or marinade from preserves. Leave it in the liquid overnight and then flake it apart. Chop the boiled eggs, dice the cucumbers and onion finely, and mix everything. Dress the salad with sour cream, mustard, horseradish, salt, and chopped dill.
17. Salad with Fish and Beets
An excellent winter salad recipe that has hints of vinaigrette and herring under a fur coat.
You will need: 500 g fish, 2 potatoes, 1 carrot, 2 beets, 2 pickled cucumbers, 1 onion, 0.5 bunch dill, 2 tbsp vinegar, 100 g sour cream, 50 g yogurt, 1 tsp grainy mustard, salt.
Preparation: Boil the fish in water with spices or bake in foil in the oven. Chop the onion and marinate in water with vinegar. Boil the beets, carrots, and potatoes, and dice them along with the cucumbers. Mix all ingredients, add chopped dill, and dress the salad with sour cream, yogurt, mustard, and salt.
18. Fish in Lavash
Another delicious fish dish for beginner cooks.
You will need: 700 g fish, 3 sheets of lavash, 150 g sour cream, 100 g mayonnaise, 1 onion, 1 tomato, 70 g vegetable oil, spices.
Preparation: Slice the onion and tomato into rings, mix sour cream with mayonnaise and spices, and cut the lavash in half. Cut the fish fillet into portions and coat in spices. In each lavash, place onion, fish in sauce, and tomatoes, wrap into envelopes, place in a baking dish seam-side down, brush with oil and remaining sauce, and bake for half an hour at 180 degrees Celsius.
19. Fish Nests
Beautiful, tender, and very delicious.
You will need: 350 g fish, 5 potatoes, 1 carrot, 1 onion, 100 g sour cream, 50 ml cream, 50 g cheese, spices, lemon, butter.
Preparation: Boil potatoes until half-cooked and similarly half-bake the fish, seasoned with spices and drizzled with lemon juice. Sauté chopped onion with grated carrots in butter.
Form foil molds for the nests, place half of the grated potatoes, spread with sour cream and cream, and add the fish. Top with carrots, spread with sauce again, then the remaining potatoes and sauce, and finally grated cheese. Bake for 20 minutes at 180 degrees Celsius.
20. Fish in Garlic-Cream Sauce
Garlic, butter, and lemon juice with herbs – an ideal combination for fish.
You will need: 350 g fish, spices, 2 tbsp starch, 2 tbsp vegetable oil, 2 lemon wedges, 4 tbsp butter, 3 cloves of garlic, 1 tbsp lemon juice, 1 tbsp chopped parsley.
Preparation: Cut the fish into portions and coat it in spices with starch. Mix melted butter with crushed garlic, lemon juice, and herbs. Fry the fish in this butter and place on a paper towel to remove excess fat.
