1. Fried Sorrel Pies

Minimal ingredients, no oven, and the result is finger-licking good!

You will need:
For the dough: 250 ml water, 200 g flour, 1 tsp dry yeast, 2 tbsp sugar, 0.5 tsp salt.
For the filling: 250 g sorrel, 1 tbsp starch, 100 g sugar.

Preparation: Dissolve dry yeast, salt, and sugar in warm water. Gradually add sifted flour, knead a soft dough, and leave it in a warm place for 1 hour. After that, knead it again and leave for another half an hour. Separately chop and mix sorrel with starch.

Divide the dough into portions, roll out flatbreads, and place a little sorrel and sugar on each. Form and fry the pies in a pan with plenty of oil on both sides until golden brown.

2. Baked Sorrel Pies with Yeast Dough

Classic homemade pies that no one can resist.

You will need:
For the dough: 200 ml kefir, 100 g butter, 1 egg, 400-450 g flour, 40 g starch, 15 g sugar, 5 g dry yeast, 0.5 tsp salt.
For the filling: 300 g sorrel, 100 g sugar.

Preparation: Mix kefir, egg, sugar, salt, and dry yeast. Gradually add flour with starch, add softened butter, and knead an elastic dough. Leave it in a warm place for 1 hour.

Chop and mix sorrel with sugar, squeeze out excess juice. Divide the dough into portions and roll out flatbreads. Place the filling, form the pies, and let them proof for another 20 minutes. After that, you can brush them with egg or milk and bake the pies for 20-25 minutes in the oven at 200 degrees Celsius.

3. Fried Sorrel Pies with Kefir

Yeast-free pies, if you don't have time or desire to wait long.

You will need:
For the dough: 300 ml kefir, 2 tsp vegetable oil, 500 g flour, 4 tbsp sugar, 1 tsp baking soda, 2 pinches of salt.
For the filling: 2 bunches of sorrel, 6-8 tbsp sugar.

Preparation: Dissolve baking soda in slightly warmed kefir, add dry ingredients, pour in vegetable oil, and knead the dough. Let it rest for 15-20 minutes, and in the meantime, chop and mix sorrel with sugar. Gently mash the filling with your hands to release juice, then drain it.

Divide the dough into pieces and roll each into a flatbread 7-8 mm thick. Place the filling and form the pies. Fry them in a pan until golden brown on both sides.

4. Sweet Sorrel Pies with Milk

Even if the milk has slightly soured – it doesn't matter for the dough.

You will need:
For the dough: 150 ml milk, 40 ml vegetable oil, 1.5 cups flour, 0.5 tbsp dry yeast, 1 tbsp sugar, 0.5 tsp salt.
For the filling: 200-250 g sorrel, 1/2 cup sugar, 1 tbsp starch.

Preparation: Mix warm milk, sugar, dry yeast, and 1-2 tbsp flour. Leave this starter in a warm place for 15 minutes, then pour in vegetable oil, salt, and gradually mix in the remaining flour. Leave the dough in a warm place for another 1 hour.

Chop and lightly squeeze the sorrel. Divide the dough into portions, roll out flatbreads, and place the filling. Sprinkle the sorrel with starch and sugar, form the pies, and brush them with egg or milk if desired. Bake for 20-25 minutes in the oven at 190 degrees Celsius, then remove, cover with a towel, and let them stand for another 10 minutes.

5. Sorrel Pies with Sour Cream and Mayonnaise

You will need:
For the dough: 100 ml milk, 2 tbsp sour cream, 2 tbsp mayonnaise, 80 g butter, 2 cups flour, 0.5 tsp baking soda, 0.5 tsp salt, 0.5 tsp sugar.
For the filling: 200 g sorrel, 3-4 tbsp sugar.

Preparation: Chop the softened butter and rub it with the dry ingredients until crumbly. Add sour cream with mayonnaise, pour in milk, and quickly knead the dough. If necessary – add a little more flour. Send the prepared dough to the freezer for 15 minutes.

After that, chop and mix sorrel with sugar to taste, lightly squeeze the filling to remove excess juice. Form flatbreads from the dough, place the filling on them, and pinch the edges. Bake the pies for 25-30 minutes in the oven at 190 degrees Celsius.

6. Sweet Cottage Cheese Sorrel Pies

For the dough: 200 g cottage cheese, 4 tbsp sour cream, 1 egg, 80 g butter, 400 g flour, 2 tbsp sugar, 0.5 tsp baking soda, 0.5 tsp salt.
For the filling: 300 g sorrel, 100-120 g sugar.

Preparation: Pass the cottage cheese through a sieve and knead a smooth, elastic dough from all ingredients. Chop the sorrel and squeeze out excess juice. Divide the dough into portions, roll out flatbreads, place the filling, and sprinkle with sugar. Form the pies and fry them on both sides until golden brown over low heat.

7. Sorrel Pies with Puff Pastry

The simplest recipe for pies using ready-made store-bought dough.

You will need:
For the dough: 400 g ready-made puff pastry, 1 egg yolk.
For the filling: 150-200 g sorrel, 4 tbsp sugar.

Preparation: Chop and mix sorrel with sugar, lightly squeeze out excess juice. Roll out the dough, cut it into squares, and make incisions on one side of each square. You will need:
For the dough: 1 egg, 100 ml yogurt, 50 ml milk, 2 tbsp vegetable oil, 300 g flour, 1.5 tbsp sugar, 0.5 tsp salt, 10 g fresh pressed yeast.
For the filling: 100 g sorrel, 1 apple, 2-3 tbsp sugar, 1 tsp starch, 1 tsp ground cinnamon.

Preparation: Mix the dry ingredients for the dough, add the wet ingredients, and knead thoroughly. Leave the dough in a warm place for 1 hour, then divide into portions and roll into flatbreads. Chop sorrel and apple, mix them with starch, and separately combine sugar with cinnamon.

Place the resulting filling on the flatbreads, sprinkle with sugar, and form the pies. Leave them in a warm place for 20 minutes, then brush with milk or egg if desired. Bake for 20-25 minutes in the oven at 180 degrees Celsius.
