You will need: 4 cups water, 1 tbsp miso paste, 1 tbsp wakame seaweed, 1 tbsp sesame seeds, 100 g tofu, 1 tsp dashi fish broth, 2 stalks green onion.

Preparation: Boil water, add dashi broth and stir. Separately, dissolve miso paste in a small amount of water, pour it into the broth, heat for another 1 minute, and remove from heat. Add tofu cubes, chopped green onion, and sprinkle the soup with sesame seeds.

Instant noodles can also be used for ramen.

You will need: 1/2 chicken, 2 eggs, 1 carrot, 1 onion, 3 cloves garlic, 4 tbsp soy sauce, 0.5 tsp ground ginger, 3 chili peppers, 10 g green onion, 1 L water, 200 g egg noodles, 1 tsp sesame seeds, spices.

Preparation: Cover the chicken with water and bring to a boil. Add the whole peeled carrot, onion cut in half, and garlic. Simmer the broth for 30-40 minutes with the lid on over low heat. Then strain the finished broth, and debone and slice the chicken.

Add soy sauce, chili pepper, and spices to taste to the broth, and bring to a boil again. Separately, boil the eggs and prepare the egg noodles according to package instructions. Arrange the noodles, egg halves, and chicken in bowls. Pour the broth over them and add sesame seeds with green onion.

Preparation: Thinly slice the leek, carrots, and celery, and sauté them for 10 minutes until soft. Add minced garlic and parsley, and fry for another 1 minute. Add both types of broth, water, both sauces, and spices to taste. Bring to a boil and simmer for 10 minutes over low heat.

At the same time, marinate the beef in spices, then fry it until cooked and slice into strips. Boil, peel, and halve the eggs. Prepare the noodles according to package instructions. Arrange everything in bowls and pour the broth with vegetables over them.

Preparation: Soak shiitake mushrooms in boiling water for 1 hour. Then rinse, slice, cover them with water again, and bring to a boil. Add diced tofu, dashi, and miso paste, stir, and simmer everything for 5-7 minutes over low heat.

Add wakame seaweed, and after another 5 minutes, add seafood and noodles. After another 5 minutes, add large pieces of red fish, bring to a boil, simmer for another 5 minutes, and remove the soup from heat. Sprinkle with sesame seeds and green onion.

If you want to make the broth richer and more aromatic, traditionally add a spoonful of dashi.

You will need: 2-3 L water, 1 leek, 500 g shiitake mushrooms, 1 carrot, 100 g green peas, 150 g noodles.

Preparation: Roughly chop the shiitake mushrooms, cover them with water, and bring to a boil over medium heat. Then reduce heat and simmer for about 1 hour, then season.

Thinly slice and sauté the carrot and leek until soft, add the sliced mushrooms from the broth to them, and fry for another 3 minutes. Add all ingredients except the noodles to the boiling mushroom broth, simmer for another 5-7 minutes, and add the noodles. Simmer the soup for another 2 minutes and let it steep for a bit.
