3. Basil Pesto Sauce for Pasta

You will need: 50g basil, 50g pine nuts or walnuts, 60 ml olive oil, 40g Parmesan cheese, 2-3 cloves garlic, 1 tbsp lemon juice, salt, ground black pepper.
Preparation: Wash and dry the basil, then blend it with the nuts and garlic, gradually adding olive oil. Add grated Parmesan, lemon juice, salt, and ground black pepper. Mix the prepared sauce.

You will need: 120g cheddar cheese or other cheese to taste, 250 ml milk, 40g butter, 40g flour, salt, paprika, spices.
Preparation: Sauté the flour in butter until it changes color slightly. Gradually pour in the milk, stirring constantly to prevent lumps. Simmer the sauce until it thickens slightly, add the grated cheese, season with salt and pepper, and cook until the cheese is completely melted.
6. Bolognese Sauce

Preparation: Finely chop and sauté the onion, carrots, garlic, and celery with a spoon of oil for 4-5 minutes. Separately brown the ground meat, stirring and breaking up lumps with a spatula.
Add the vegetables to the meat, pour in the wine, and reduce it for 5-6 minutes over medium heat. Then add the diced tomatoes, tomato paste, and all spices, bring the sauce to a boil, and simmer for 30-40 minutes covered over low heat.

Preparation: Thaw the spinach directly in a pan and add butter, salt, spices, and minced garlic. Sauté everything for 5-6 minutes, pour in the cream, and bring to a boil. Then reduce the heat, sprinkle with grated Parmesan, and simmer the sauce until the cheese melts.

Preparation: Finely chop the carrot, celery, and half of the onion. Peel and slice the tomatoes, place the vegetables in a pot, add salt, sugar, and all spices, pour in 2-3 tablespoons of olive oil, bring to a boil, then reduce the heat.
Simmer the mixture covered for about 20-30 minutes over low heat. In the meantime, finely chop and separately sauté the remaining onion with garlic, add them to the stewed vegetables, and blend the sauce until smooth. If desired, strain it through a sieve.
