You will need: 5 eggs, 200 g sugar, 125 ml milk, 180 g butter, 1 tbsp flour, 20 g gelatin, 80 ml water.

Preparation: Dissolve gelatin in cold water according to instructions. Separate egg whites from yolks. Beat yolks with half the sugar until pale using a mixer, add flour with milk and beat again. Heat the mixture over low heat, stirring constantly, until it thickens, then let it cool completely.

Beat softened butter with a mixer until fluffy. While continuing to beat, add the custard base. Separately, beat egg whites with the remaining sugar until stiff peaks form, pour the cooled gelatin into the whites and beat again. While continuing to beat, gradually add the creamy mixture to the whites. Pour the soufflé into a mold and refrigerate until set.
