You can use shrimp of any size – it doesn't matter.

You will need: 400 g shrimp, 1-1.5 bell peppers, 1/2 onion, 100 g cream cheese, 250 ml cream, 30 g butter, salt, spices.

Preparation: Pour about 1 liter of water over the shrimp, add your favorite spices, and boil for 2-3 minutes after it comes to a boil. Strain the broth and peel the shrimp.

Chop and sauté the onion with bell pepper in butter directly in the pot, then add the shrimp and fry for another 1-2 minutes. Bring the cream to a boil, mix it with cream cheese, pour over the shrimp and vegetables, and simmer gently for a short time. Add the strained broth until the soup reaches your desired consistency and cook everything together for 3-5 minutes.

For this, you'll definitely need to prepare fish broth or shrimp shell broth in advance.

You will need: 300 g peeled shrimp, 1.5 L fish broth, 2-3 potatoes, 1 onion, 1 carrot, 2 celery stalks, 150 ml dry white wine, 200 ml 20% cream, 30 g butter, salt, spices.

Preparation: Chop and sauté the vegetables in butter directly in the pot. Add the shrimp and fry for another 1-2 minutes, then pour in the white wine. Reduce it by about half, pour in the broth, bring everything to a boil, and cook for 10 minutes. Blend the soup until smooth and strain it. Pour in the cream, add a few more whole shrimp if desired, season, and cook for a few more minutes.

You will need: 400 g peeled shrimp, 150 g rice, 200 g processed cheese, 150 g carrots, 150 g onions, salt, spices.

Preparation: Chop and sauté the onion with carrots directly in the pot. Pour in water, bring to a boil, add the rinsed rice, and cook until done. Season the soup and add the processed cheese. Once the cheese has melted, add the shrimp, bring to a boil again, and remove the soup from the heat.

You will need: 250 g peeled shrimp, 1 tomato, 2 tbsp rice, 1 tbsp tomato paste, 1 onion, 1 bunch cilantro, 1/2 bunch dill, 2 cloves garlic, salt, spices.

Preparation: Place peeled shrimp, chopped tomato, garlic, and chopped dill in a pot. Pour in about 1 liter of water, season, and bring to a boil. Add sautéed onion, tomato paste, rinsed rice, and chopped cilantro. Simmer the soup until the rice is cooked.

5. Thai Shrimp and Chicken Soup

Curry paste can be purchased at almost any large supermarket.

You will need: 1 chicken fillet, 300 g peeled shrimp, 200 g noodles, 1 L chicken broth, 400 ml coconut milk, 1 package curry paste, 2 kaffir lime leaves, 1 handful dried shiitake or other mushrooms, 2 tsp fish sauce, 1/2 lime, 1 handful mint.

Preparation: Lightly heat the curry paste in a pot, pour in the broth with coconut milk, and bring to a boil. Add kaffir lime leaves and pre-soaked and sliced dried mushrooms.

Cook for 5 minutes over medium heat and add the chicken, cut into strips, to the soup. After another 8 minutes, add the shrimp, and after 2-3 minutes, remove the soup from the heat. Serve with cooked noodles and season with fish sauce, lime juice, and sprinkle with mint.

6. Cream of Shrimp Soup with Cauliflower and Zucchini

Perfect for a healthy diet too!

You will need: 300 g shrimp, 1 zucchini, 150 g cauliflower, 1 onion, 1 carrot, 2 cloves garlic, 100 ml cream, 50 g hard cheese, 2 L water or broth, 50 g butter, salt, spices.

Preparation: Chop and sauté the onion with carrots in half of the butter, add the chopped zucchini with cauliflower, and fry for a few more minutes. Add the sautéed vegetables to boiling water, cook for 15 minutes, and blend until smooth.

Separately, parboil and peel the shrimp, sauté them in the remaining butter, season, and add to the soup. Pour in the cream, add grated cheese, bring everything to a boil again, and remove from heat.

7. Tom Yum Soup with Shrimp

A nutritious and very tasty Thai soup.

You will need: 300 g shrimp, 200 g onion, 150 g tomatoes, 20 g chili pepper, 15 g ginger, 2 stalks lemongrass, 100 g mushrooms to taste, 1 handful kaffir lime leaves, 1.3 L water, 100 ml coconut milk, 1 tbsp brown sugar, 4 tbsp fish sauce, 5 tsp lime juice.

Preparation: Peel the shrimp and place their heads in a pot. Add chopped tomatoes, chili, ginger, and lemongrass, cover with water, bring to a boil, and cook the broth for 20 minutes over medium heat. Then strain the broth, discard the heads, and return the other ingredients.

Bring the broth to a boil and add kaffir lime leaves and sliced mushrooms. After 3-4 minutes, add the shrimp, lime juice, coconut milk, fish sauce, and sugar. Cook the soup for another 3 minutes and serve.

You will need: 400 g peeled shrimp, 400 g potatoes, 1-2 carrots, 300 g processed cheese, 200 ml milk, salt, spices.

Preparation: Add chopped potatoes and processed cheese to boiling water or broth. Cook for 15 minutes, then add grated and sautéed carrots. Add the shrimp to the soup, pour in the milk, season, and bring everything to a boil again. Remove from heat.

You will need: 200 g peeled cooked shrimp, 1 cup tomato juice, 1 tomato, 1/2 bell pepper, 1/2 cucumber, 1 shallot, 1 clove garlic, 2 tbsp red wine vinegar, 2 tsp olive oil, salt, ground black pepper, parsley.

Preparation: Peel the tomato and dice the vegetables finely. Add minced garlic, red wine vinegar, salt, ground black pepper, mix, and let sit for 5 minutes. Then pour in the tomato juice and refrigerate the gazpacho to chill. Before serving, drizzle the soup with olive oil, sprinkle with parsley, and add shrimp.

Preparation: Add chopped potatoes to boiling broth and cook for 10-15 minutes. Separately, boil shrimp until cooked. Grate and sauté carrots with celery root until soft. Separately, stew spinach until excess moisture evaporates.

Combine spinach with vegetables and stew for a few more minutes. Add the sautéed mixture to the broth and blend until smooth. Pour in the cream, season, add shrimp, and cook the soup for another 2-3 minutes over low heat.

Preparation: Sauté the onion directly in the pot until lightly golden. Add minced garlic and spices, and after another 1 minute, add chopped tomatoes with their juice and rinsed lentils.

Pour in the broth, season, bring to a boil, and cook for 20-25 minutes over medium heat. Blend the soup with warm cream, and at the very end of cooking, add cooked or sautéed shrimp and heat everything together for another 1 minute.

You will need: 200 g shrimp, 100 g noodles, 1 L chicken broth, 1 carrot, 2 cloves garlic, 20 g green onions, salt, spices.

Preparation: Grate and stew carrots until soft, add minced garlic and green onions, and cook for another 3 minutes. Bring the broth to a boil, add the noodles, and after 2 minutes, add shrimp, the sautéed mixture, and spices. Cook everything together for 2-3 minutes.

Preparation: Chop and boil the pumpkin until soft. Add garlic, salt, and spices, and blend it into a puree with cream and some of the cooking liquid until it reaches the desired consistency. Cook the soup for a few more minutes, and in the meantime, sauté the shrimp in butter. Serve the soup with shrimp.
