4. Fresh Rosehip and Apple Compote

You'll need: 500 g apples, 250 g rosehips, 2.5 L water, sugar.
Preparation: Leave small apples whole, and cut larger ones into several pieces. Sort and rinse the rosehips. Boil the water, add all ingredients, and cook the compote for 15 minutes after it re-boils. Remove from heat and let it cool, covered.

Preparation: Sort and rinse the rosehips, trim the stems, and put the berries into a pot. Add sugar and water, bring to a boil, and cook the compote for 20 minutes, covered. At the end of cooking, add citric acid and seal the compote in sterilized jars.

If using fresh or semi-dried rosehips, lightly mash them with a rolling pin and add them at this stage, not at the beginning. Let the finished compote steep for 1 hour, covered, then strain.

7. Rosehip and Cranberry Compote

You'll need: 1 cup rosehips, 300 g cranberries, 2 L water, sugar.
Preparation: In a thermos, pour 1 liter of boiling water over the rosehips and let steep for 12 hours. Then strain this infusion and add the remaining water. Mash the cranberries through a sieve and add the pulp to the rosehip infusion. Bring to a boil, cook for 5 minutes, strain, and then add the cranberry juice and sugar. Mix the resulting compote thoroughly.

After that, mash the rosehips using any convenient method, cover with the remaining hot water, let steep for another 20 minutes, and strain again. Combine both infusions and the raisins, bring to a boil once more, remove from heat, and let the compote steep, covered, for another 20 minutes.

You'll need: 100 g dried rosehips, 250 g dried apricots, 150 g sugar, 1.5 L water.
Preparation: Soak the rinsed dried apricots until plump and drain the water. Lightly mash the rosehips and place them in a pot along with the dried apricots and sugar. Pour boiling water over everything, cook the compote for 12-15 minutes, then let it steep, covered.

Add as much water as you like, and cook the compote for another 20 minutes. After that, let it steep, covered, and strain.
