Don't throw away overripe bananas! It's very easy to turn them into wonderful homemade baked goods. We have a great recipe for banana muffins in an air fryer for you. Fluffy, delicious, and just sweet enough – they will be a magnificent addition to a cup of tea or coffee!

Preparation time: 25 minutes.
Servings: 4.

Ingredients

  • 200-220 g all-purpose flour;
  • 3 bananas;
  • 3 chicken eggs;
  • 100 g sugar;
  • 2 tablespoons sour cream;
  • 30 ml vegetable oil;
  • 1 teaspoon baking powder;
  • 1 pinch vanilla;
  • 1 pinch salt.

Step-by-Step Recipe

  1. Peel the bananas, break them into pieces, then blend them in a blender until smooth.
  2. Mix the banana puree with eggs, sour cream, vegetable oil, sugar, salt, and vanilla.
  3. Add the sifted flour and baking powder, and mix until smooth.
  4. Divide the batter into muffin molds, filling them 2/3 full, and place them in the air fryer basket.
  5. Bake the banana muffins in the air fryer for approximately 15 minutes at 160 degrees Celsius (320°F). Done!
