1. Pea Soup with Smoked Pork Ribs and Bacon in an Afghan Kazan

A hearty soup with a vibrant smoky aroma.

You will need: 700 g smoked pork ribs, 100 g bacon, 250 g split peas, 400 g potatoes, 150 g carrots, 100 g onions, 2 cloves garlic, vegetable oil, salt, ground black pepper, turmeric, bay leaf, other spices.

Preparation: Rinse the peas and chop all ingredients. Heat the Afghan kazan with oil and fry the bacon until crispy, then set it aside. Sauté the onions and carrots in the same oil for 5-7 minutes.

Add the pork ribs, followed by garlic, potatoes, peas, and all the spices. Fill the kazan 2/3 full with water, close the lid, and bring to a boil. Then reduce the heat and cook the pea soup for approximately 40-45 minutes. Let it rest for another 15 minutes before serving.

Thick, substantial, and with a deep meaty flavor.

You will need: 1 kg beef, 200 g split peas, 5 potatoes, 2 carrots, 1 onion, vegetable oil, salt, spices.

Preparation: Rinse the peas and chop all ingredients. Heat the kazan with oil and sauté the onion and carrot until soft. Add the beef, diced potatoes, peas, and your favorite soup spices, then pour in about 1.5 liters of water.

Do not fill the Afghan kazan more than 2/3 full. Close the lid, bring it to a boil, reduce the heat, and cook the pea soup for another 50-60 minutes. Then release the steam from the valves and open the kazan.

3. Pea Soup with Pork in an Afghan Kazan

An excellent recipe when you crave a classic without extra additions.

You will need: 600 g pork, 100 g bacon, 250 g split peas, 400 g potatoes, 1 carrot, 1 onion, vegetable oil, salt, spices.

Preparation: Roughly chop the pork, rinse the peas, and chop all vegetables. Lightly fry the bacon in oil directly in the Afghan kazan, then set it aside. In the bacon fat, fry the pork until golden.

Add the onion, carrot, and spices, fry for another 3 minutes, then add the peas, potatoes, and fried bacon. After another 5 minutes, pour hot water up to 2/3 of the kazan, close the lid, and bring to a boil. Cook the pea soup for about 45 minutes over low heat.

4. Pea Soup with Smoked Sausage in an Afghan Kazan

You will need: 400 g smoked pork or other meat, 250 g smoked sausage, 1 cup split peas, 5 potatoes, 2 carrots, 1 onion, 3 cloves garlic, vegetable oil, salt, spices.

Preparation: Rinse the peas and chop all ingredients. Sauté the onion, garlic, and carrot directly in the kazan. Add the sliced sausage, fry for another 5 minutes, then add the remaining ingredients.

Fill the kazan 2/3 full with water, close the lid, and bring to a boil. Cook the pea soup for approximately 45 minutes over low heat, then release the steam from the valves and open the Afghan kazan.

You will need: 300 g chicken fillet, 1 cup split peas, 3 potatoes, 2 carrots, 1 onion, 2 cloves garlic, vegetable oil, salt, spices.

Preparation: Chop and sauté the onion, garlic, and carrot directly in the kazan. Add the chicken fillet, cut into medium pieces, and fry for a few more minutes.

Add the rinsed peas, diced potatoes, and soup spices. Pour in water, close the Afghan kazan with the lid, bring to a boil, and cook the pea soup for 45 minutes over low heat.

You will need: 10-12 smoked pork ribs, 150 g semi-smoked sausage, 1 cup split peas, 1 carrot, 1 bell pepper, 1 onion, vegetable oil, salt, spices.

Preparation: Rinse the peas, prepare the pork ribs, and slice the sausage and vegetables. Sauté the onion and carrot in the kazan, add the sausage and bell pepper, and fry for a few more minutes.

Add the ribs, peas, and spices, cover with water, and close the Afghan kazan with the lid. Bring to a boil, then reduce the heat and cook the pea soup for approximately 45 minutes.
