Red fish is fattier and has a completely different taste compared to white fish. Therefore, red fish soups are very different from classic fish soup (ukha). It pairs wonderfully with cream and cheese, and with various vegetables, it becomes an excellent base for healthy and diet-friendly soups. We're sharing a collection of 12 original recipes!

1. Red Fish Ukha (Fish Soup)

When serving, add chopped herbs and a couple of lemon slices.

You will need: 500 g red fish, 3-4 potatoes, 1 onion, 2 carrots, 2 liters of water, 2 tbsp butter, spices.

Preparation: Prepare the fish. Cover the head, tail, skin, bones, and all trimmings with water, bring to a boil, cook for 20 minutes, and strain the broth.

Sauté the onion and carrots in a pot with butter until soft, add the chopped potatoes, pour in the broth, and cook for 5 minutes after boiling. Add pieces of red fish and spices to taste, and cook the ukha until the ingredients are tender. Let it steep for a bit under the lid.

A very delicious, vibrant, and impressive first course with a unique aroma.

You will need: 400 g red fish, 200 g processed cheese, 100 g spinach, 1 bell pepper, 1-2 potatoes, 1 onion, 1 carrot, 1 tsp paprika, spices.

Preparation: Cover the cleaned fish with water, bring to a boil, and cook for 20-25 minutes over low heat. Strain the broth, and flake the fish into pieces. Dice the onion, carrot, and bell pepper, and sauté until soft.

Add the sautéed vegetables and diced potatoes to the broth, bring to a boil, and add the processed cheese. Cook everything together for 10-12 minutes until the potatoes are tender. Add the chopped spinach, red fish, and spices, cook the soup for another 2-3 minutes, and remove from heat.

You can use either fillets or any portioned fish pieces.

Preparation: Cover the fish with water, add parsley root and spices for broth, bring to a boil, and cook for 15 minutes. Strain the broth, add the rinsed rice and chopped potatoes, bring to a boil again, and cook for 10 minutes over low heat. Chop and sauté the onion with carrots and bell pepper until golden. Add to the soup, return the red fish, add spices and herbs to taste. Cook the soup for another 10 minutes.

4. Red Fish Soup with Cream

One of the classic variations for preparing salmon or trout soup.

You will need: 500 g red fish, 100 ml heavy cream, 3 potatoes, 1 onion, 1 carrot, 4 sprigs of dill, spices.

Preparation: Prepare the fish, cover the skin and bones with water, add spices, bring to a boil, and cook for 20 minutes with the lid on. Strain the prepared broth.

Finely chop the vegetables and sauté the onion with carrots directly in the pot. Add the broth and potatoes, bring to a boil, and cook for 5 minutes. Add the diced red fish and cook for another 15 minutes. Pour in the cream, season the soup to taste, add chopped dill, and bring the soup to a boil again. Remove it from heat and let it steep under the lid.

Cut the red fish into serving pieces, cover with water, cook until done, and set aside. Add the peeled shrimp, sautéed vegetables, spices, and chopped basil to the broth. Bring to a boil, cook for 10 minutes, return the fish, and remove the soup from heat.

Chop and sauté the onion and carrots until golden, add tomato paste, a few spoons of broth, spices, and garlic. Preparation: Finely chop the onion, carrot, parsnip, and pickled cucumbers. Sauté the onion directly in the pot for 2-3 minutes. Add the carrot and parsnip, and fry for another 5 minutes, stirring.

Add tomato paste, cucumbers, and spices, simmer everything for 2-3 minutes, pour in half of the broth, and bring to a boil. Cook the soup for 10 minutes. Add olives, capers, pickle brine, spices, and diced red fish. Cook the soup for another 5-7 minutes until the fish is done. At the end of cooking, add herbs and lemon slices.
