You will need: 100 g tofu, 150 g shiitake mushrooms, 4 tbsp wakame seaweed, 100 g miso paste, 3 tbsp dashi broth, 2 green onion stalks.
Preparation: Pour hot water over the seaweed and let it rehydrate. Separately, mix miso paste with 1 cup of water until smooth. If the mushrooms are dried, soak them in boiling water for 15 minutes.
Place the shiitake mushrooms in a pot, pour in about 1 liter of water, bring to a boil, and cook for 15 minutes. Add the granulated fish broth, seaweed, and dissolved miso paste. Bring the soup to a boil, add the tofu cubes, stir gently, remove from heat, and let it steep for a bit. Sprinkle the finished soup with chopped green onions.
2. Korean Tofu and Kimchi Soup

You will need: 300 g pork, 200 g kimchi, 150 g tofu, 50 g onion, 2 cloves garlic, 2 tbsp kimchi marinade, 1 tsp soy sauce, 1 tsp sesame oil, 600 ml water, herbs.
Preparation: Cut and fry the pork on all sides until it changes color. Transfer it to a pot and add sesame oil, soy sauce, minced onion with garlic, kimchi, kimchi marinade, and hot water.
Simmer the soup for about 30 minutes over low heat, without stirring, and 5 minutes before the end of cooking, add the tofu cubes. When serving, sprinkle the soup with chopped herbs.

3. Tofu and Spinach Soup

You will need: 200 g tofu, 50 g spinach, 2 tbsp doenjang paste, 2 cloves garlic, 2 green onion stalks, 1 liter water.
Preparation: Boil water and dissolve the soybean paste in it. Add spinach and tofu cubes to the pot and cook for 8-10 minutes over low heat. Then add minced green onion and garlic, and cook the soup for another 2 minutes.

Preparation: Boil carrots and potatoes in advance. Dice all ingredients, including tofu, into small cubes and chop the herbs. Mix everything with vegan mayonnaise, salt, pepper, and drizzle with lemon juice. Pour cold mineral water or plain water over the okroshka and serve.
