1. Soup with Wakame Seaweed, Shiitake Mushrooms, and Tofu

A classic homemade miso soup from Japanese cuisine.

You will need: 100 g tofu, 150 g shiitake mushrooms, 4 tbsp wakame seaweed, 100 g miso paste, 3 tbsp dashi broth, 2 green onion stalks.

Preparation: Pour hot water over the seaweed and let it rehydrate. Separately, mix miso paste with 1 cup of water until smooth. If the mushrooms are dried, soak them in boiling water for 15 minutes.

Place the shiitake mushrooms in a pot, pour in about 1 liter of water, bring to a boil, and cook for 15 minutes. Add the granulated fish broth, seaweed, and dissolved miso paste. Bring the soup to a boil, add the tofu cubes, stir gently, remove from heat, and let it steep for a bit. Sprinkle the finished soup with chopped green onions.

2. Korean Tofu and Kimchi Soup

An interesting recipe for all fans of Asian dishes.

You will need: 300 g pork, 200 g kimchi, 150 g tofu, 50 g onion, 2 cloves garlic, 2 tbsp kimchi marinade, 1 tsp soy sauce, 1 tsp sesame oil, 600 ml water, herbs.

Preparation: Cut and fry the pork on all sides until it changes color. Transfer it to a pot and add sesame oil, soy sauce, minced onion with garlic, kimchi, kimchi marinade, and hot water.

Simmer the soup for about 30 minutes over low heat, without stirring, and 5 minutes before the end of cooking, add the tofu cubes. When serving, sprinkle the soup with chopped herbs.

3. Tofu and Spinach Soup

Note that Korean soybean paste is essential for this recipe.

You will need: 200 g tofu, 50 g spinach, 2 tbsp doenjang paste, 2 cloves garlic, 2 green onion stalks, 1 liter water.

Preparation: Boil water and dissolve the soybean paste in it. Add spinach and tofu cubes to the pot and cook for 8-10 minutes over low heat. Then add minced green onion and garlic, and cook the soup for another 2 minutes.

4. Mushroom and Tofu Soup

A lean vegetarian soup that fits well into any diet.

You will need: 200 g tofu, 200 g champignons, 1 bell pepper, 1 leek stalk, 1 bunch cilantro, 3 cloves garlic, 2 tbsp soy sauce, 1 tsp sesame oil, 1 liter broth or water.

Preparation: Roughly chop the leek, bell pepper, and champignons, and slice the garlic. Lightly fry everything together for 5-6 minutes, stirring.

Then pour in the broth, add tofu, bring to a boil, and pour in the soy sauce. Cook the soup for 5-7 minutes under a lid over low heat. Finally, add sesame oil and chopped cilantro, season to taste, and let the soup steep.

5. Vegetable Soup with Tofu

A diet-friendly soup with plenty of vegetables for everyday.

You will need: 200 g tofu, 1 carrot, 1 bell pepper, 100 g broccoli, 1 onion, 1 tbsp soy sauce, 1 tsp vegetable oil, 1 liter vegetable broth.

Preparation: Roughly chop all vegetables and sauté the onion and carrot in oil until soft. Add the bell pepper and broccoli and fry for a few more minutes. Pour in the broth, bring the soup to a boil, then add tofu cubes and soy sauce. Cook the soup for another 5-7 minutes over low heat.

6. Tomato Soup with Tofu

The sweet and sour taste of tomatoes pairs well with the neutral taste of tofu.

You will need: 300 g canned tomatoes, 200 g tofu, 1 onion, 1 clove garlic, 1 tbsp olive oil, 750 ml vegetable broth or water, salt, paprika, dried basil, ground black pepper.

Preparation: Finely chop and sauté the onion and garlic in olive oil until soft. Lightly mash the tomatoes, add them to the fried onion, and pour in the broth. Bring to a boil, season with salt and spices, and add the tofu cubes to the soup. Cook for 6-7 minutes over low heat.

7. Noodle and Tofu Soup

You will need: 150 g tofu, 80 g noodles, 1 carrot, 1 tbsp soy sauce, 1 tsp grated ginger, 1 liter vegetable broth, green onion.

Preparation: Bring the broth to a boil and add the julienned carrot and ginger. After 3 minutes, add the noodles, soy sauce, and tofu cubes. Cook the soup until the noodles are done, and sprinkle with chopped green onion before serving.

8. Thai Coconut Tofu Soup

Coconut milk will make the soup creamy and slightly sweet.

You will need: 180 g tofu, 120 g champignons, 3 tbsp canned corn, 400 ml coconut milk, 600 ml vegetable broth, 1 tbsp soy sauce, 1 tsp grated ginger, juice of half a lime, cilantro.

Preparation: Mix coconut milk with broth, bring to a boil, and add sliced champignons, canned corn, tofu cubes, and ginger. Then pour in soy sauce and cook for about 5 minutes. Finally, add lime juice and sprinkle the soup with chopped cilantro.

9. Cabbage, Tofu, and Celery Soup

You will need: 250 g tofu, 200 g cabbage, 1 carrot, 1 onion, 1/2 celery root, 1 clove garlic, 1 liter water or broth, salt, spices.

Preparation: Mince and sauté the onion, carrot, and celery root until soft, add thinly shredded cabbage and fry for a few more minutes, stirring. Then pour in water or broth, bring to a boil, season to taste, and simmer for 3-4 minutes. Add tofu cubes and cook the soup for another 3 minutes.

10. Okroshka with Tofu

An unusual vegan recipe when you need variety.

You will need: 200 g tofu, 150 g cucumbers, 150 g radishes, 200 g potatoes, 200 g carrots, 1 bunch of herbs, 40 g vegan mayonnaise, lemon juice, salt, spices.

Preparation: Boil carrots and potatoes in advance. Dice all ingredients, including tofu, into small cubes and chop the herbs. Mix everything with vegan mayonnaise, salt, pepper, and drizzle with lemon juice. Pour cold mineral water or plain water over the okroshka and serve.
