1. Korean Beef and Egg Noodle Soup

You will need: 300 g beef, 2 carrots, 1 daikon radish, 1/2 bunch green onions, 2 cloves garlic, 2 eggs, 1 chili pepper, 3 tbsp soy sauce, 1.5 L water, spices.
Preparation: Slice the beef into thin strips and marinate it in a tablespoon of soy sauce for 10 minutes. Mince the garlic, green onions, and chili. Slice the daikon and carrots thinly on the diagonal – like diamonds. Whisk the eggs, fry 3-4 thin egg crepes, let them cool, and cut into thin noodles.
Sear the beef over high heat until lightly browned. Add the garlic and chili, and after half a minute, pour in boiling water. Bring to a boil and simmer the soup for 20 minutes over low heat. Add the vegetables and cook for another 5 minutes.
Add soy sauce and spices, remove the soup from the heat, and let it steep for 10 minutes, covered. Ladle into bowls, sprinkle with green onions, and add the egg crepe noodles.
2. Kimchi Jjigae

You will need: 250 g pork belly, 1 onion, 450 g kimchi cabbage, 50 ml kimchi brine, 2 tsp brown sugar, 0.5 tsp ground red pepper, 1 tsp gochujang (chili paste), 1.5 tsp sesame oil, 300 g tofu, 550 ml water.
Preparation: Thinly slice the pork, julienne the onion, cut the kimchi into squares, and the tofu into cubes. Place the kimchi in a pot and pour in the brine, then add the onion on top, followed by the pork, and then the sugar, red pepper, and gochujang.
Drizzle with sesame oil and pour in the water, without stirring. Cover with a lid, cook for 10 minutes over medium heat, and only then stir the soup. Add the tofu, cover, and cook for another 15 minutes.

3. Cold Kuksi Soup

You will need: 300 g beef, 2 eggs, 100 g radish, 300 g cucumbers, 2 cloves garlic, 200 g Napa cabbage, 50 g cilantro, 30 g noodles, 100 ml vegetable oil, 1 L water, sugar, salt, spices, rice vinegar, and soy sauce.
Preparation: Cut the beef into thin strips and fry over high heat in a small amount of oil. Add the shredded cabbage, season, reduce heat, and simmer for 10 minutes. Let the mixture cool. Separately, boil the noodles, rinse them with cold water, and drizzle with oil.
Grate the cucumbers and radish, finely chop the garlic with cilantro, and add a little more oil, salt, spices, and soy sauce to taste. Whisk the eggs with 2 tablespoons of water, fry thin crepes, roll them up, and cut into thin noodles.
Mix cold water with 4 tablespoons of soy sauce, a tablespoon of sugar and salt, and two tablespoons of vinegar. Arrange the beef with cabbage, noodles, egg crepes, and vegetables in bowls, and pour the icy broth over everything.
4. Haejangguk

You will need: 3 cups vegetable broth, 200 g beef, 0.5 tbsp sesame oil, 2 cloves garlic, 1 tbsp soy sauce, 1 cup bean sprouts, 200 g Napa cabbage, 2 tsp ground red pepper, 2 tsp sesame seeds, 100 g green onions.
Preparation: Slice the beef into strips, mince the garlic, and fry them for 2-3 minutes over high heat in sesame oil. Mince the kimchi and add it to the pan.
Add soy sauce and vegetable broth, and bring everything to a boil. Add the shredded cabbage, sprouts, and spices, and simmer the soup for 15 minutes over low heat. Add chopped green onions, cook for another 1 minute, ladle the soup into bowls, and sprinkle with sesame seeds.

5. Yukgaejang

You will need: 600 g beef, 50 g gosari fernbrake, 1 onion, 2-3 bunches green onions, 250 g mung bean sprouts, 2 eggs, 250 g daikon radish, 4 shiitake mushrooms, 1 tsp doenjang (soybean paste), 2 tbsp soy sauce, 3 cloves garlic, 2 tbsp sesame oil, 2 tbsp gochujang (chili paste), spices.
Preparation: Pour 4 cups of water over the gosari fernbrake and cook over medium heat for half an hour, covered. Let it cool in the water, then rinse and chop.
Place the beef, onion, and daikon in a pot, cover with water, and simmer for 1-1.5 hours over low heat. Strain the broth, and thinly slice the meat into strips. Cut the green onions into long strands and thinly slice the shiitake mushrooms.
Sauté the garlic in sesame oil for half a minute, add the gochujang and stir. Add the meat, mushrooms, fernbrake, and a tablespoon of soy sauce. Mix everything thoroughly and heat gently. Add all of this to the boiling broth.
Add another tablespoon of soy sauce and the doenjang. Cook the soup over medium heat, covered, for 20 minutes. Season the soup to taste and pour in the beaten eggs, stirring constantly. Remove the soup from the heat and finally add the green onions and mung bean sprouts.
6. Korean Noodle Soup with Seafood

You will need: 50 g zucchini, 50 g shiitake mushrooms, 120 g Napa cabbage, 35 g onion, 1 clove garlic, 30 g ginger, 200 g mussels, 150 g shrimp, 150 g seafood mix, 1 tbsp rice wine, 2-3 tsp chili flakes, 20 g green onions, 2 tbsp soy sauce, 1 L water, 20 g spinach, 450 g udon noodles.
Preparation: Thinly slice the zucchini, shiitake mushrooms, Napa cabbage, and onion. Mince the garlic and ginger, clean and rinse all seafood. Sauté the garlic, ginger, chili flakes, and chopped green onions for 1-2 minutes. Add the zucchini, mushrooms, regular onion, and cabbage, and fry for another 2 minutes, stirring.
Add all the seafood, stir, and pour in the water with rice wine and soy sauce. Cook the soup for about 8 minutes, covered, add the spinach and cook for another 1 minute. Separately, boil the noodles, rinse in cold water, arrange in bowls, and pour the soup over them.

7. Korean Pork Soup with Noodles and Eggs

8. Korean Chicken Soup

Preparation: Mix ginger, minced garlic, soybean paste, sugar, minced hot pepper, fish sauce, and soy sauce. Place in a pot, add the chicken cut into pieces, pour in 3-4 cups of water, and bring to a boil. Cook for 15-20 minutes, covered.
Add the chopped potatoes and kimchi, and cook the soup for another 15 minutes. Add more water if necessary. Add chopped green onions, chili flakes, and spices to taste, and cook the soup for another 10 minutes uncovered.
