1. Phyllo Dough Pie with Cheese and Herbs

You will need: 400 g phyllo dough, 100 g butter, 200 g feta cheese, 150 g cottage cheese, 250 g fresh herbs, 5 eggs, salt, ground black pepper.
Preparation: Finely chop all the herbs and mix them with crumbled feta, cottage cheese, eggs, salt, and ground black pepper. Lay a sheet of phyllo dough in a baking dish, overlapping the edges so they hang over. Brush with melted butter and add another layer of dough.
Brush with butter again, spread some filling, cover with another layer of dough, brush with butter – and repeat until all ingredients are used. We recommend planning your ingredients so there are 2-3 layers of filling.
The top layer should be dough with all the overhanging edges folded in. Brush everything with butter one more time and, if desired, make cuts for individual portions. Bake the pie for 50-60 minutes in the oven at 180 degrees Celsius.

You will need: 400 g phyllo dough, 80 g butter, 300-350 g chicken fillet, 250 g mushrooms, 1 onion, 200 ml cream, 2 eggs, salt, spices.
Preparation: Chop and sauté chicken fillet with onion and mushrooms until almost cooked, season the filling to taste. Assemble the pie in the following sequence: a layer of phyllo dough, melted butter, a layer of dough, melted butter, filling – and repeat two or three times. The last layer should be dough brushed with the remaining butter. Pour beaten eggs with cream over everything and bake for about 40 minutes in the oven at 180 degrees Celsius.

3. Phyllo Dough Pie with Salmon and Spinach

You will need: 400 g phyllo dough, 80 g butter, 300 g salmon fillet, 100 g spinach, 100 g hard cheese, salt, ground black pepper.
Preparation: Dice the salmon, lightly sauté the spinach until the moisture evaporates, grate the cheese, and mix the filling. Season with salt and pepper to taste.
Lay 3-4 layers of dough in a baking dish, brushing each layer with melted butter. Then spread the filling and cover it with another 2-3 layers of phyllo dough. Brush the pie with the remaining butter and, if desired, sprinkle with sesame seeds or other seeds. Bake for 40 minutes in the oven at 180 degrees Celsius.
4. Phyllo Dough Pie with Pear and Camembert

You will need: 200 g phyllo dough, 2 pears, 150 g Camembert cheese, 50 g walnuts, 250 ml cream, 2 eggs, 1 tsp sugar, 1 pinch of salt.
Preparation: Slice the pear and Camembert, and whisk the cream with eggs, salt, and sugar. Fold the phyllo dough sheets like an accordion and arrange them in a baking dish.
Place the cheese and pears between the folds of the accordion, pour the custard over everything, and sprinkle with chopped walnuts. Bake the pie for approximately 30-35 minutes in the oven at 180 degrees Celsius. You can drizzle it with honey and garnish with thyme when serving.

5. Phyllo Dough Pie with Minced Meat

You will need: 8 sheets of phyllo dough, 500 g minced meat, 1 onion, 2 eggs, 100 ml sour cream, salt, spices.
Preparation: Sauté the minced meat with chopped onion until almost cooked, season to taste. Spread some of this filling along the edge of one phyllo dough sheet, roll it into a thin cylinder, and form the remaining rolls in the same way. Arrange them in a baking dish in a spiral shape and pour a mixture of sour cream and eggs over them. Bake the pie for 30 minutes in the oven at 180 degrees Celsius.

Spread some of this filling along the edge of a phyllo dough sheet, roll it into a tight cylinder, and repeat with the remaining sheets. Arrange the rolls in a baking dish in a spiral shape. 9. Phyllo Dough Pie with Potatoes

You will need: 500 g phyllo dough, 5 potatoes, 1 leek, fresh herbs, olive oil, salt, ground black pepper.
Preparation: Peel and slice the potatoes into thin rounds, soak them briefly in cold water, and let them dry. Finely chop the leek and herbs, and mix the resulting filling with spices.
Lay a sheet of phyllo dough in a baking dish, brush it with olive oil, add a second sheet and brush it too – repeat this with half of all the dough. Then spread the potato filling and arrange the remaining dough in the same way, brushing it with oil.
