We offer a selection of recipes that won't let you down, even if it's your first time roasting a goose in the oven! With vegetables, citrus, spices, and more – choose your favorite!
1. Roasted Goose with Apples

You will need: 1 goose carcass, 800 g apples, 3 tbsp soy sauce, 2 tbsp olive oil, 1.5 tbsp honey, 2 tsp paprika, 1.5 tsp nutmeg, 1.5 tsp ground coriander.
Preparation: Wash and pat the goose dry. Mix all dry spices and rub the bird thoroughly inside and out. Leave for 1 hour, then brush the carcass with a marinade of olive oil, soy sauce, and honey, after which wrap it in cling film and refrigerate for another 12 hours.
Next, stuff the bird with sliced apples and secure the openings with toothpicks. Brush the goose with marinade again, place it in a roasting pan breast-side up, and roast for 40 minutes in the oven at 220 degrees Celsius. Then arrange the remaining apples around it, cover the roasting pan with a lid, and roast for another 2 hours.
2. Goose with Cherry Plums and Apples in the Oven

You will need: 1 goose carcass, 6 apples, 150 g cherry plums, 50 ml lemon juice, salt, ground black pepper, spices to taste.
Preparation: Make small incisions on the goose's breast skin, rub it with lemon juice and spices inside and out, and leave it overnight in the refrigerator. Then stuff it with coarsely chopped apples and fruits, sew up the opening, and wrap the wings in foil.
Preheat the oven to 200 degrees Celsius and place a deep pan with water on the bottom, with a rack above it. Place the goose on the rack, cover with foil, and roast for 15 minutes. Then reduce the temperature to 180 degrees, remove the foil, and roast for another 1 hour, periodically basting with fat from the pan. Then reduce the temperature to 170 and roast for another 50 minutes.
3. Goose with Oranges in the Oven

You will need: 1 goose carcass, 3 oranges, 100 ml soy sauce, 50 g honey, 50 ml olive oil, salt, spices.
Preparation: Mix oil, honey, soy sauce, salt, and spices to taste. Rub the goose inside and out and refrigerate for 1 hour. Then rub the carcass with marinade again and stuff with peeled orange segments.
Sew up the opening, leave the bird for another 1 hour at room temperature, and place it in a roasting bag. Roast the goose in the oven for approximately 2 hours at 220 degrees Celsius, but the larger the carcass, the longer the roasting time will be. Then remove the goose from the bag and return it to the oven until it browns.

4. Roasted Goose with Buckwheat, Mushrooms, and Chicken Liver

You will need: 1 goose carcass, 1 cup buckwheat, 300 g chicken liver, 200 g mushrooms, 2 onions, 2 apples, salt, spices.
Preparation: Rub the goose carcass with salt and spices inside and out. Then grate one apple and rub the goose with this puree. Refrigerate for 2 hours, and in the meantime, boil the buckwheat and fry the chopped onion with mushrooms and liver.
Chop the second apple and mix all the stuffing ingredients. Stuff the goose, sew up the opening, and place the bird in a roasting bag. Make several punctures in the bag and roast the goose for 2-3 hours in the oven at 190 degrees Celsius, but be sure to cut open the bag half an hour before it's done.
5. Goose with Prunes in the Oven

You will need: 1 goose carcass, 3 apples, 4 handfuls of prunes, 3 tsp mustard, 3 tsp honey, salt, poultry spices.
Preparation: Soak the prunes in hot water for 5 minutes, and coarsely chop the apples. Rub the goose with salt and spices inside and out, stuff it, and sew up the opening. Then brush the bird with a mixture of mustard and honey, place it in a roasting bag, and roast for 2-3 hours in the oven at 200 degrees Celsius, depending on its size. On average, 2 hours per 2 kg.

6. Roasted Goose with Potatoes in a Roasting Bag

You will need: 1 goose carcass, 800 g potatoes, 500 ml dry white wine, 40 ml olive oil, salt, poultry spices.
Preparation: Rub the goose with salt and spices inside and out. Place it in a bag or container, pour in the wine, tie or close it, then shake well and refrigerate for 8-12 hours.
Afterward, rinse the goose with water, rub it with olive oil and spices, and place it in a roasting bag. Roast for 1 hour in the oven at 200 degrees Celsius, then reduce the temperature to 170 and roast for another 1.5-2 hours, calculating 1 hour of roasting per 1 kg of carcass. 50-60 minutes before it's done, cut open the bag, baste the goose with the released juices, and arrange peeled potatoes around it.

Preparation: Boil the rice until half-cooked, fry the chopped onion with carrots, mix and season the stuffing, and add butter to it. Rub the goose with spices inside and out, stuff it, and sew up the opening. Place the bird in a roasting pan, brush with sour cream, and roast for 40 minutes in the oven at 200 degrees Celsius. Then cover with a lid and roast for another 2 hours.

9. Goose with Apples and Pineapple in the Oven

You will need: 1 goose carcass, 4 apples, 1/2 pineapple, 150 g prunes, 2 onions, 1 carrot, 10 potatoes, 30 ml cognac, 1 tbsp honey, 1 tbsp sugar, salt, paprika, nutmeg, cinnamon, hot red pepper, and other spices.
Preparation: Rub the carcass with all spices inside and out, place it in a bag, and refrigerate for 24 hours. Then arbitrarily chop the apples and pineapple, rinse the prunes with hot water, sprinkle the stuffing with spices, stuff the goose with it, and sew up the opening.
Arrange coarsely chopped onion and carrot on the bottom of the roasting pan and place the goose on top. Roast for 3 hours in the oven at 190 degrees Celsius, but 1 hour before the end, arrange coarsely chopped potatoes around it. Separately mix honey, sugar, cognac, and a little water. You will need: 1 goose carcass, 180 g white bread, 50 g hazelnuts, 100 g dried apricots, 100 g dried cranberries, 1 onion, 50 g butter, 1 lemon, herbs, salt, spices.
Preparation: Finely chop and fry the onion in butter, add chopped nuts and dried fruits, mix, and cook for another 1 minute. Crumble the bread, chop the herbs, zest the lemon, and mix all this with the stuffing.
Rub the goose with salt and spices inside and out, leave for 1 hour, then stuff with the filling and sew up the opening. Place a rack over a baking sheet with water, put the goose on it, and roast for 2-3 hours in the oven at 190 degrees Celsius. Periodically baste the bird with the dripping fat.

Preparation: Rub the bird with salt and spices inside and out, then stuff with coarsely chopped apples and quince, and sew up the opening. Pour wine and 750 ml of water into a deep baking sheet, add bay leaf, cloves, and allspice, and place the goose in it. Arrange chopped vegetables, roots, and leftover stuffing around it.
Place everything in the oven for half an hour at 180 degrees Celsius. Then baste with the released juices, flip it over, and roast for another 2-2.5 hours. Continue to baste the goose periodically with the juices. Half an hour before it's done, you can add a few whole apples. If the goose starts to brown too much, cover it with foil.
