You will need: 200 g butter, 2 eggs, 3 cups flour, 100 g sugar, 50-60 g coconut flakes, 0.5 tsp baking powder, 1 pinch salt.

Instructions: Whisk melted butter with sugar, salt, eggs, and baking powder. Gradually add sifted flour, knead the dough, and refrigerate for 20 minutes. Then, roll the dough into balls, coat them in coconut flakes, and flatten slightly. Arrange the cookies on parchment paper and bake for approximately 15 minutes in an oven preheated to 180 degrees Celsius.

Instructions: Mash the banana with a fork and mix it with oil, water, and sugar. Adjust the amount of sugar depending on the sweetness of the banana. Add flour and coconut flakes, mix the dough, and with wet hands, form small round cookies. Bake them for 20-22 minutes in an oven preheated to 180 degrees Celsius.

You will need: 2 egg whites, 1.5 cups coconut flakes, 50 g chocolate, 2 tbsp cocoa, 1/3 cup sugar, 2 pinches salt.

Instructions: Separate egg whites from yolks, then beat the whites with salt and sugar until stiff peaks form. Melt chocolate in a double boiler and mix it with cocoa and coconut flakes. Gently fold the egg whites into this mixture and refrigerate for half an hour. Then, shape the cookies and, if desired, sprinkle with additional coconut flakes. Bake the cookies for 25 minutes in an oven preheated to 170-180 degrees Celsius.

You will need: 200 g cottage cheese, 1 egg, 80 g flour, 40 g coconut flakes, 1.5 tbsp sugar, 1 tsp baking powder, 1 pinch salt.

Instructions: Beat cottage cheese, egg, salt, and sugar until smooth, then add the dry ingredients. Knead and refrigerate the dough for 10 minutes. Then, divide it into pieces and shape into cookies. You can also sprinkle them with sugar. Bake for 20-25 minutes in an oven preheated to 180 degrees Celsius.

8. Lemon Coconut Cookies

Then, form small balls from the dough, flatten them, and arrange on parchment paper. If desired, sprinkle with more coconut flakes or powdered sugar. Bake the cookies for about 15 minutes in an oven preheated to 170 degrees Celsius.

Instructions: Dissolve baking soda in 2 tbsp boiling water and separately mix the other dry ingredients. Melt the butter and combine it with the syrup. Pour the liquid mixture into the dry mixture, add the baking soda, and mix the dough thoroughly. Form and flatten balls, and bake the cookies for 15 minutes in an oven preheated to 180 degrees Celsius.

Instructions: Whisk egg yolks with sugar, baking powder, ginger, and all spices. Add soft butter, mix again, and gradually add flour. Roll the resulting dough into a log, cut into small pieces, and shape into cookies. Roll them in coconut flakes and bake for 12-15 minutes in an oven preheated to 180 degrees Celsius.
