You will need: 500 g minced meat, 2 eggplants, 2 tomatoes, 3 potatoes, 1 onion, 100 g hard cheese, 500 ml milk, 50 g flour, 50 g butter, vegetable oil, salt, spices.

Preparation: Slice the potatoes into rounds, salt them, fry them in vegetable oil until lightly golden, and arrange them as the first layer in a baking dish. Slice the eggplants, fry them as well, and layer them over the potatoes.

Separately, fry the minced meat with chopped onion, season, and spread it over the eggplants. Next, add tomato slices. After that, fry the flour in butter, pour in warm milk, and cook the resulting sauce until thickened, stirring constantly. Pour it over the moussaka, sprinkle with grated cheese, and bake for 30 minutes in the oven at 200 degrees Celsius.

2. Meatballs in Tomato Sauce

Soft meat spheres in a thick sauce – a classic that always saves the day.

You will need: 300 g minced meat, 50 g rice, 50 g carrots, 1 onion, 50 g flour, 1.5 tbsp tomato paste, 0.5 tsp khmeli-suneli, vegetable oil, salt, spices.

Preparation: Mix the minced meat, rinsed rice, half of the chopped onion, and all the spices. Knead the mince thoroughly, form meatballs, roll them in flour, and fry until browned on all sides.

Then transfer the meatballs to a pot, and in the same pan, sauté the remaining onion and grated carrots until soft. Pour in 1 cup of water with tomato paste, season, bring to a boil, and simmer the gravy for about 3-5 minutes. Pour this sauce over the meatballs, bring to a boil again, and simmer for 25 minutes over low heat.

You will need:
For the dough: 300 g flour, 1 egg, 1 tsp dry yeast, 150 ml water, 25-30 ml vegetable oil, 1 tsp sugar, 1 tsp salt.
For the filling: 300 g minced meat, 2 onions, 1 egg, 1 tbsp milk, spices.

Preparation: Mix the dry ingredients for the dough, pour in vegetable oil and warm water, knead, and leave the dough to rest for 1 hour in a warm place. Separately, mix the minced meat with chopped onion and spices, and fry the filling for 7-8 minutes, stirring. Let the filling cool.

Divide the dough into parts and place the larger part into a baking dish, forming the base and sides. Spread the filling, cover the pie with the remaining dough, and pinch the edges. Whisk the egg with milk, brush it over the pie, and make a hole for steam on top. Bake for 35-40 minutes in the oven at 180 degrees Celsius.

Preparation: Lightly fry the chopped onion with garlic, add the minced meat, and cook until it changes color, stirring. Add the chopped bell pepper, cook for another 1 minute, then add tomato paste, a few spoons of water, and all spices to taste. Simmer the filling until cooked through and let it cool slightly.

Sprinkle half of a tortilla with grated cheese, spread the meat filling, and then add corn and chopped cilantro. Sprinkle with more cheese and cover with the other half of the tortilla. Prepare the remaining quesadillas in the same way. Fry the quesadillas in a dry pan on both sides, pressing lightly to melt the cheese and seal them.

5. Homemade Chebureki in a Frying Pan

You will need: 350 g flour, 1 egg, 1 cup water, 2 tbsp vegetable oil, 300 g minced meat, 1 onion, 1 clove garlic, salt, spices.

Preparation: Pour 1 cup of boiling water into the sifted flour and mix. When the mixture has partially cooled, pour in vegetable oil, beat in the egg, salt, and knead into an elastic dough. Cover it with cling film and let it rest for 30 minutes. For the filling, mix the minced meat, chopped onion, garlic, spices, and a little ice water for consistency. It should be as homogeneous as possible.

Divide the dough into portions, roll out flatbreads, place the meat filling, fold in half, pinch the edges, and roll out a little more. Fry the chebureki in vegetable oil for 2-3 minutes on each side. At the end of frying, place them on paper towels to remove excess oil.

6. Cutlets with Mushrooms and Cheese

Classic cutlets will take on new flavors if you add a mushroom filling and melted cheese.

You will need: 400 g minced meat, 50 g onion, 50 g white bread, 100-120 ml milk, 150 g mushrooms, 100 g hard cheese, breadcrumbs, vegetable oil, salt, spices.

Preparation: Soak the bread in milk and squeeze it out. Pass the bread and onion through a meat grinder or chop with a blender. Mix with the minced meat, season to taste, grate the cheese, and fry the sliced mushrooms. Form a patty from the minced meat and place some mushrooms and cheese inside.

Form a cutlet so that the filling is inside, and roll it in breadcrumbs. Make the rest of the cutlets in the same way and fry them for 5-6 minutes over medium heat on both sides. Then bake them for 10 minutes in the oven at 180 degrees Celsius or finish cooking in a pan with a lid over low heat.

Preparation: Chop and lightly fry the onion with garlic in olive oil. Add the minced meat, season, and fry for 12-15 minutes until cooked. Pour in the tomato sauce, mix, and simmer for another 20 minutes. Mix the cooked Bolognese with chopped herbs.

Separately, fry the flour in butter and pour in warm milk, stirring constantly. Season and cook the resulting béchamel sauce until it reaches the consistency of thin sour cream, continuing to stir. Cook the lasagna sheets according to package instructions and grate the Parmesan cheese.

Pour a little béchamel onto the bottom of a heatproof dish and place a lasagna sheet. Then add minced meat, more béchamel, and another lasagna sheet. Repeat the layers until finished, spread béchamel over the top lasagna sheet, and sprinkle with Parmesan. Bake for 30-40 minutes in the oven at 180 degrees Celsius.

Preparation: Cut out the tough inner core from the cabbage head, immerse the cabbage in boiling water, cook for 5 minutes, flip it over, and cook for another 2-3 minutes. Let it cool, separate the leaves, and trim the tough thick edges.

Boil the rice until half-cooked, and chop and fry the onion with carrots until soft. Mix the minced meat, rice, and half of the vegetables, season, and wrap this filling in the cabbage leaves.
