You will need: 1.5 kg yellow plumcot, 3 heads garlic, 1 hot pepper, 1 bunch parsley, 1 tbsp coriander, 1 tbsp dill seeds, 1 tsp fenugreek, 2 tbsp salt, 4 tbsp sugar.
Preparation: Cover the plumcot with water, bring to a boil, and cook for 10 minutes. Strain through a sieve. Remove the pits from the pulp remaining in the sieve and add it back to the puree.
Using a blender, finely chop the herbs, garlic, and hot pepper. Add to the plumcot, cook for 20 minutes, and add all the spices with salt and sugar to the sauce. Cook for another 10-15 minutes and seal the sauce in sterilized jars.

5. Plumcot Charlotte
