You will need: 500 g squid, 2 cucumbers, 1 purple onion, dill, vegetable oil, lemon juice, salt, ground black pepper.

Preparation: Boil the squid for 1-2 minutes in boiling water, cool, and slice into rings. Cut the cucumbers into julienne strips and the onion into thin slices. Mix everything with chopped dill, dress with vegetable oil and lemon juice, season with salt and pepper.

An excellent cold appetizer for a Lenten table.

You will need: 500 g squid, 1 onion, 2 tbsp vinegar, 2 tbsp vegetable oil, bay leaf, salt, ground black pepper.

Preparation: Boil the squid for 1 minute in boiling water and slice into rings. Then mix them with thinly sliced onion, vinegar, oil, salt, and spices, and leave to marinate for 30 minutes.

A hearty and very successful recipe without eggs or dairy products.

You will need: 500 g squid, 1 onion, 100 g white bread, 80 g breadcrumbs, 2 tbsp semolina, salt, ground black pepper, vegetable oil.

Preparation: Soak the bread in a small amount of water and squeeze lightly. Mince the squid together with the onion and bread in a blender or pass through a meat grinder.

Add semolina, salt, ground black pepper, and mix the mince well, then let it rest for 15 minutes. With wet hands, form patties, roll them in breadcrumbs, and fry on both sides over medium heat until golden brown.

4. Lenten Stuffed Squid in the Oven

An impressive dish suitable for both everyday and festive meals.

You will need: 6 squid tubes, 150 g rice, 200 g mushrooms, 1 carrot, 1 onion, 2 tbsp tomato paste, 2 cloves garlic, vegetable oil, salt, ground black pepper.

Preparation: Boil rice until half-cooked. Mince and sauté the onion, carrot, and mushrooms until soft, add pressed garlic, mix them with rice, season with salt and pepper.

Fill the prepared squid tubes with this stuffing, but not too tightly. Place the tubes in a baking dish. Dilute the tomato paste with a little water, pour over the squid, and bake for about 25 minutes in the oven at 180 degrees Celsius.

5. Stewed Squid with Vegetables

A simple hot dish for a family lunch or dinner.

You will need: 600 g squid, 1 bell pepper, 2 tomatoes, 2 carrots, 1 onion, vegetable oil, salt, ground black pepper, aromatic herbs.

Preparation: Sauté the minced onion and carrot until soft, add sliced bell pepper and tomatoes. After 5 minutes, add the squid rings to the vegetables and stew everything together for another 3-4 minutes, seasoning to taste. The main thing is not to overcook the dish. If desired, sprinkle with chopped herbs when serving.

Preparation: Sauté the onion with the carrot, then add the rinsed rice and spices. Pour in water and simmer almost until cooked under a lid. Then add the sliced squid and simmer everything together for a few more minutes.

9. Squid with Potatoes and Vegetables in a Pan

You will need: 300 g squid, 5 potatoes, 1 bell pepper, 1 onion, herbs, vegetable oil, salt, spices.

Preparation: Cut potatoes into julienne strips, fry until cooked, and set aside. Separately, sauté thinly sliced onion until golden. Add sliced bell pepper and arbitrarily chopped garlic to it.

Cook for a few more minutes, then add squid strips or rings to the vegetables. Continue to fry for 1 minute, mix everything with potatoes, and cook for another 1 minute until done. Season with salt, spices, and sprinkle with chopped herbs.
