1. Breaded Squid Cutlets

A classic cooking method that always works.

You will need: 500 g squid, 100 g breadcrumbs, 1-2 egg yolks, salt, spices.

Preparation: Thaw the squid and finely chop it into mince using a blender, or you can pass it through a meat grinder. Mix the mince with egg yolks, about half of the breadcrumbs, salt, and spices to taste. With wet hands, form cutlets, roll them in the remaining breadcrumbs, and fry on both sides over medium heat.

Very juicy and tender – a pure delight.

You will need: 600 g squid, 1 egg, 2 slices of white bread, 150 ml milk, 1/2 onion, breadcrumbs, salt, spices.

Preparation: Briefly boil the squid for 2 minutes in boiling water, roughly chop the onion, and pass everything through a meat grinder. Soak the white bread in milk, squeeze it out, and add to the mince. Beat in the egg, season with salt and spices, mix well, and form cutlets with wet hands. Roll them in breadcrumbs and fry on both sides in a pan over medium heat.

3. Lean Squid Cutlets

Note that this recipe does not use eggs!

You will need: 500 g squid, 1 onion, 100 g dried bread, 100 g breadcrumbs, salt, spices.

Preparation: Chop and fry the onion until golden, thaw the squid, add the bread, and blend everything until smooth. If the mixture is too liquid, mix in some breadcrumbs. Season the mince with salt and spices to taste, form cutlets with wet hands, roll them in breadcrumbs, and fry on both sides over medium heat.

4. Baked Squid Cutlets

For brightness and aroma, you can add a little chopped fresh herbs.

You will need: 400 g squid, 2 carrots, 2 eggs, 200 g flour, salt, spices.

Preparation: Clean and pass the squid through a meat grinder, grate the carrots finely, and mix everything with eggs, salt, and spices. Gradually mix the flour into the mince until it becomes thick enough. Form cutlets, roll them in the remaining flour, and place on parchment paper. Bake for 15-20 minutes in the oven at 180 degrees Celsius.

You will need: 500 g squid, 2 potatoes, 1 onion, 2 cloves garlic, 50 g bread, 50 ml water, 3 tbsp semolina, dill, salt, spices.

Preparation: Soak the bread in water and squeeze it out, thaw the squid, and roughly chop the peeled vegetables. Pass everything together through a meat grinder, then add chopped dill, semolina, salt, and spices. Mix well and let the mince rest for half an hour, then heat a pan with oil and spoon out the cutlets. Fry them on both sides over medium heat.

Feel free to use any flour you like for breading.

You will need: 500 g squid, 1 egg, 1 onion, 3 tbsp semolina, flour, salt, spices.

Preparation: Mince the squid bodies with a blender, finely chop the onion, and mix everything with semolina, salt, and spices. Let the mince rest for 20 minutes, form cutlets, roll them in flour, and cook them for about 30 minutes in a multicooker on the “Bake” setting. Flip once after 15 minutes.

You will need: 600 g squid, 1 egg, 1 onion, 1 bunch of herbs, 3 tbsp oat bran, salt, spices.

Preparation: Roughly chop and pass the squid and onion through a meat grinder. Mix with chopped herbs, salt, spices, and oat bran. Let the mince rest for half an hour and spoon out the cutlets onto parchment paper. Bake for 30-40 minutes in the oven at 180 degrees Celsius. If the cutlets start to burn, flip them during cooking.

You will need: 400 g squid, 120 g rice, 1 egg yolk, 100 g processed cheese, 2 cloves garlic, flour, salt, spices.

Preparation: Briefly boil the squid for half a minute in boiling water and pass through a meat grinder. Cook the rice, grate the processed cheese, and press the garlic.

Mix all ingredients together, and if desired, pass through a meat grinder again for a smoother consistency. Season the mince with salt and spices, form cutlets, roll them in flour, and fry on both sides in a pan over medium heat.

10. Squid Cutlets with Mayonnaise
