You will need: 300g tofu, 4-5 cherry tomatoes, 1/2 onion, 2 cloves garlic, 20g cilantro, 3 tbsp flour, 3 tbsp soy sauce, 1.5 tbsp lemon juice, 1 tsp sesame oil, 1.5 tsp sugar.

Preparation: Cut the tofu into cubes and coat them in flour. Finely chop the onion, garlic, and cilantro, then mix everything with soy sauce, lemon juice, sesame oil, and sugar. Fry the tofu in a pan until golden brown, add halved cherry tomatoes, pour in the prepared sauce, and heat for another 1 minute.

You will need: 300g tofu, 5 tbsp coconut cream, 5 tbsp flour, 1 tbsp vegetable oil, sugar, salt.

Preparation: Blend the tofu with vegetable oil, coconut cream, sugar, and salt to taste. Gradually add the flour and mix the mixture thoroughly.

Add enough flour until the dough is thick and sticky. Form small tofu pancakes, roll them in the remaining flour, and fry on both sides over medium heat until golden brown.

If you like, add raisins, dried apricots, or any other dried fruits.

You will need: 400g tofu, 60-80ml plant-based milk, 1-2 tbsp coconut oil, 1 tsp lemon juice, 1 tbsp starch, 1 tbsp flour, sugar, vanilla.

Preparation: Blend the tofu, lemon juice, coconut oil, plant-based milk, sugar, and vanilla. Add the flour and starch, mix thoroughly, and if desired, add your filling. Pour the mixture into a baking dish and bake for 40 minutes in the oven at 180 degrees Celsius.

6. Tofu in Sweet and Sour Sauce

A vibrant recipe with an Asian flair.

You will need: 300g tofu, 1 bell pepper, 2 tbsp soy sauce, 1 tbsp tomato paste, 1 tbsp syrup to taste, 1 tsp apple cider vinegar, vegetable oil.

Preparation: Cut and fry the tofu until golden, then add the bell pepper cut into strips and fry for another 2-3 minutes, stirring. Separately mix soy sauce, tomato paste, syrup, and apple cider vinegar – you can adjust the proportions to taste. Pour this sauce over the tofu and heat for another 3 minutes. When serving, the dish can be sprinkled with sesame seeds or chopped green onions.

7. Lean Vareniki with Pumpkin and Tofu

Despite their originality, they are easy to prepare from readily available ingredients.

You will need: 220g flour, 130ml water, 1.5 tsp vegetable oil, 300g pumpkin, 80-100g tofu, 1 onion, salt, spices.

Preparation: Finely chop and sauté the onion until soft, then add grated pumpkin and simmer over medium heat until almost cooked. Season to taste, mix the filling with grated tofu, heat for another 1 minute, and let cool.

Separately dissolve a pinch of salt in warm water, pour in 1.5 tsp vegetable oil, and gradually mix in the sifted flour. Knead an elastic dough, cover with a towel, and let it rest for a bit.

Then roll out and cut the dough into circles, spread the filling, and form the vareniki. Boil them in salted boiling water for 3-4 minutes after they float to the surface.

8. Zucchini with Tofu in Tomato Sauce

Experiment with different spices – coriander, smoked paprika, curry.

You will need: 3 zucchinis, 200g tofu, 250ml tomato sauce, 100ml plant-based milk, 1/2 lemon, olive oil, salt, spices, aromatic herbs.

Preparation: Cut the zucchinis into long thin slices, season, drizzle with vegetable oil, and bake for about 15 minutes in the oven at 180 degrees Celsius. Separately blend the tofu with lemon juice, a spoon of oil, and spices. If the cream is too thick, add a little more water or plant-based milk.

Mix the tomato sauce, plant-based milk, and spices, and bring to a boil. Wrap the tofu filling in the zucchini slices, place them in a heatproof dish, pour the sauce over them, and bake for another 15-20 minutes at 180 degrees Celsius.

9. Lean Tofu Patties

You will need: 350-400g tofu, 3 tbsp wheat flour, 3 tbsp corn flour, 3 green onion stalks, 3 tbsp breadcrumbs, 1.5 tsp ground coriander, 0.5 tsp turmeric, salt.

Preparation: Mash the tofu with a fork until crumbled, add salt, spices, both types of flour, and chopped green onion. If the mixture is too crumbly, add a little water.

Refrigerate the mixture for half an hour, then form small patties and roll them in breadcrumbs. Fry on both sides in a pan over medium heat until golden brown.

You will need: 250g tofu, 2 potatoes, 1 bell pepper, 1 tomato, 1 carrot, 1 onion, 1.5 liters water, herbs, salt, ground black pepper.

Preparation: Dice the potatoes, add them to boiling water, and cook for 10 minutes. Finely chop the onion, grate the carrot, and sauté them until soft, then add the bell pepper and cook for a few more minutes.

Add the chopped tomato to the vegetables, simmer for 3-4 minutes, and transfer the sautéed vegetables to the pot. Salt, pepper, and cook the soup for 5 minutes. After that, add the diced tofu and heat everything for another 2-3 minutes.

You will need: 200g rice, 250g tofu, 1 bell pepper, 1 carrot, 1 onion, 2 tbsp soy sauce, salt, spices.

Preparation: Cook the rice until done and let it cool slightly. Dice the tofu, fry until golden, and set aside. In the same pan, sauté the finely chopped onion and grated carrot until soft, then add the chopped bell pepper and cook for a few more minutes. Return the fried tofu and rice, pour in the soy sauce, salt, season, and gently mix. Cook everything together for 3-4 minutes.

12. Chocolate Tofu Mousse

You will need: 300g soft or silken tofu, 150g chocolate, 50ml soy milk, 2-3 tbsp syrup to taste, 0.5 tsp instant coffee, nuts and berries to taste.

Preparation: Blend the tofu, soy milk, syrup, and coffee. Separately melt the chocolate using any convenient method, mix everything together, and blend again. Pour the resulting mixture into molds, refrigerate for about 30 minutes, then decorate with berries and nuts.
