Strain the decoction, mix it with the juice and sugar, bring to a boil, and remove from heat. Add gelatin and stir until dissolved.

Let the mixture cool, then place the container with the mixture into a bowl with ice. Whisk the mousse with a mixer for 5-7 minutes, let it sit for 10 minutes, and whisk again for another 5-7 minutes. Continue whisking until stiff peaks form, spoon into molds, and refrigerate the mousse.
