You will need: 200 g flour, 120 ml boiling water, 1 tbsp vegetable oil, 300 g minced meat, 20 g herbs, salt, spices.
Preparation: Knead a stiff dough from flour, boiling water, vegetable oil, and a pinch of salt, wrap it in cling film, and let it rest for 15-20 minutes. In the meantime, mix the minced meat, chopped herbs, and spices to taste separately.
Divide the dough into portions and roll them into flatbreads. Place the filling, gather them into pouches with the meat inside, and roll them out again. Fry them on both sides in a pan over medium heat – about 5-7 minutes per side.

You will need: 250 ml kefir, 300 g flour, 1 tsp sugar, 0.5 tsp baking soda, 250 g minced meat, 1 onion, salt, spices, aromatic herbs.
Preparation: Mix kefir, baking soda, sugar, and a pinch of salt, then gradually add the flour. Knead and let the dough rest a bit, and in the meantime, mix the minced meat, chopped onion, and spices.
Divide the dough into 5-6 portions, roll out flatbreads, and spread the minced meat on them. Gather the flatbreads into pouches with the filling inside and roll them out again. Fry for 3-4 minutes on both sides in a dry non-stick pan over medium heat.

3. Potato Flatbreads with Minced Meat

You will need: 500 g potatoes, 1 egg, 50 g flour, 250 g minced meat, 1 onion, herbs, salt, spices.
Preparation: Chop and sauté the onion until soft, add the minced meat, and continue frying until the moisture evaporates – about 15 minutes over medium heat, stirring occasionally. Finally, season with salt, spices, and add chopped herbs to the filling.
Separately, boil and mash the potatoes into a puree, let it cool, and mix with the egg and flour. Divide the potato dough into several portions, form flatbreads, and place the meat filling on them. Fold the flatbreads into pouches so the filling is inside, roll them out, and fry on both sides in a pan over medium heat.

Preparation: Whisk the egg with vegetable oil and vinegar, pour in warm water, salt, and gradually mix in the flour. Knead the dough well by hand and let it rest for 10-15 minutes.
