1. Pork Tails in Sweet and Sour Sauce

You will need: 800 g pork tails, 50-60 ml soy sauce, 1.5-2 tbsp tomato sauce or ketchup, 1 tbsp honey, 1 tsp mustard, 4 cloves garlic, spices.
Preparation: Rinse the pork tails, scrape off the skin, cover them with water, and add any spices for broth. Simmer for 2 hours over low heat.
Mix all other ingredients and garlic pressed through a garlic press. Place the tails in a baking dish, pour the sauce over them, and bake for 25 minutes in the oven at 200 degrees Celsius.
2. Chinese-Style Pork Tails

You will need: 500 g pork tails, 1/2 onion, 2 cloves garlic, 1 cm ginger root, 60 ml soy sauce, 1 tsp rice vinegar, 1 tsp oyster sauce, 1 tsp vegetable oil, 1 tbsp sugar, 0.5 tsp chili flakes, Chinese spices to taste.
Preparation: Rinse the tails thoroughly, scrape off the skin, and boil them for 5 minutes in boiling water. Then rinse with cold water and transfer to a container.
Finely chop the onion, garlic, and ginger, add half of the sugar and spices, pour in soy sauce and 25-35 ml of water. Pour this marinade over the pork tails, close the container, and marinate them for 1-3 days in the refrigerator, shaking occasionally.
Then heat the vegetable oil, fry the marinated tails until golden brown, pour in the remaining marinade, and simmer until tender over low heat – about 1 hour. Add rice vinegar, oyster sauce, remaining spices, and sugar, and cook for another 10 minutes until the tails are glazed.

3. Pork Tails Braised with Vegetables

You will need: 700-800 g pork tails, 2 tomatoes, 1 carrot, 1 onion, 2 sprigs thyme or rosemary, 3 cloves garlic, 1 cm ginger root, 4 tbsp soy sauce, 1 tbsp vegetable oil, 1 tbsp sugar, spices.
Preparation: Clean and rinse the tails, cover them with water, add spices to taste, and simmer for 1 hour after boiling over low heat. Closer to the end – add thyme or rosemary for aroma. Then rinse the pork tails again in cold water, pat dry, and chop.
Finely chop the garlic with ginger, peel and dice the tomatoes, slice the onion into feathers, and grate the carrot. Sauté the onion, garlic, and ginger in vegetable oil until translucent, add the carrot, and after a few minutes – the tomatoes.
Sprinkle in sugar and spices, pour in soy sauce, simmer everything together for a few minutes, and then add the tails to the vegetables. Stir, add about 1.5-2 cups of water, and simmer for another 1-1.5 hours over low heat. Stir occasionally and add water if necessary.
4. Pork Tails in a Multicooker

You will need: 800 g pork tails, 2 carrots, 1 onion, 2 cloves garlic, 2 bay leaves, 1 tbsp paprika, 1 tsp dried thyme, 1 tsp dried rosemary, 500 ml chicken broth, vegetable oil, salt, ground black pepper.
Preparation: Thoroughly rinse and pat dry the pork tails, slice the onion into half-rings, the carrots into circles, and finely chop the garlic. Heat a little oil in the multicooker on the sauté mode and fry the onion until golden.
Add the carrots and garlic and cook for 3-4 minutes, then add the tails and continue to fry until lightly browned on all sides. Sprinkle everything with salt, spices, and aromatic herbs, add bay leaves, pour in the broth, and stir. Set to "Stew" mode for 2 hours.

5. Aspic from Pork Tails

You will need: 1 kg pork tails, 1/2 chicken, salt.
Preparation: Thoroughly clean and rinse the pork tails, and place them with the chicken in a large pot. Cover with water, leave for 2 hours, then drain the water and rinse the ingredients. Cover with fresh water, bring to a boil, and if desired, add an onion, root vegetables, herbs, or spices for broth.
Cook everything together for 5 hours over minimal heat, ensuring the broth covers the meat. Then cool and strain the broth, season with salt to taste, and separate the meat from the bones and arrange in molds. Pour the aspic and refrigerate.
6. Braised Pork Tails with Potatoes

Preparation: Dice the potatoes into medium cubes and boil until cooked. Thoroughly rinse and cut the pork tails into small pieces, then fry them until golden brown on all sides.
Add finely chopped onion and grated carrot, fry for a few more minutes, then add tomato paste, spices, and 1 cup of water. Simmer everything together for 20 minutes over low heat, add the potatoes, and simmer for another 5-7 minutes.

Preparation: Clean and thoroughly rinse the tails, score the skin, and rub them with salt and spices. Slice the onion into rings, place them at the bottom of a baking dish, and arrange the pork tails on top. Optionally, add a sprig of thyme or rosemary.
Pour in the water, cover with foil, and bake for 2 hours in the oven at 180 degrees Celsius. Then remove the foil, pour in a little beer, and bake for another 45 minutes, basting periodically with the same beer.
