Light seafood salads have long become a true classic of Mediterranean cuisine. Arugula adds a pleasant piquancy to such a salad, while shrimp make it more satisfying and balanced. And what would it be without juicy and bright cherry tomatoes? We share a delicious recipe!

Servings: 4.

Ingredients

  • 150 g arugula;
  • 300-350 g peeled shrimp;
  • 200 g cherry tomatoes;
  • 40 g Parmesan cheese;
  • 1 tablespoon lemon juice;
  • 2 tablespoons olive oil;
  • 1 teaspoon honey;
  • 1/2 teaspoon ground black pepper;
  • 1/2 teaspoon salt.

Step-by-step recipe

  1. Wash and dry the arugula. Halve the cherry tomatoes, and slice the Parmesan into thin flakes using a vegetable peeler or a special grater.
  2. Sauté the shrimp for 2 minutes in a preheated pan with a little olive oil.
  3. For the salad dressing, mix the remaining olive oil with lemon juice, honey, ground black pepper, and salt. You can also add a few drops of balsamic vinegar.
  4. Combine the arugula, fried shrimp, and cherry tomatoes in a salad bowl.
  5. Pour the prepared dressing over the salad, gently mix, and sprinkle with Parmesan flakes.
