Arugula, Shrimp, and Cherry Tomato Salad – An Excellent Recipe

Ingredients
- 150 g arugula;
- 300-350 g peeled shrimp;
- 200 g cherry tomatoes;
- 40 g Parmesan cheese;
- 1 tablespoon lemon juice;
- 2 tablespoons olive oil;
- 1 teaspoon honey;
- 1/2 teaspoon ground black pepper;
- 1/2 teaspoon salt.
Step-by-step recipe
- Wash and dry the arugula. Halve the cherry tomatoes, and slice the Parmesan into thin flakes using a vegetable peeler or a special grater.
- Sauté the shrimp for 2 minutes in a preheated pan with a little olive oil.
- For the salad dressing, mix the remaining olive oil with lemon juice, honey, ground black pepper, and salt. You can also add a few drops of balsamic vinegar.
- Combine the arugula, fried shrimp, and cherry tomatoes in a salad bowl.
- Pour the prepared dressing over the salad, gently mix, and sprinkle with Parmesan flakes.
