Preparation: Mix 3 tbsp vegetable oil, lemon juice, and any spices to taste. Marinate the medallions for 1 hour in this mixture at room temperature, then wrap each one with a slice of bacon.
Pan-fry the medallions in the remaining oil until golden brown, flip, and immediately add the chopped onion and garlic. Cook everything together for another 3-4 minutes, covered or uncovered.

Preparation: Wrap the medallions in bacon and pan-fry for 2-3 minutes on all sides. Add a little butter, onion, and garlic, cook for another 2 minutes, and carefully set the beef aside. You will need: 500g beef medallions, 150g mushrooms, 100g sour cream, 1 carrot, 1 onion, 50g shallots, 2 cloves garlic, 2 sprigs thyme, 50g butter, 20ml olive oil, 10ml balsamic vinegar, 50ml water, 1-2 pinches sugar.
Preparation: Roughly chop the carrot, onion, and mushrooms, mince the shallots. Mix olive oil, balsamic vinegar, minced thyme, onion, and carrot, add the beef there and leave to marinate for 15 minutes.
Sauté the shallots in butter in a skillet, add the mushrooms and fry for 2-3 minutes. Pour in the sour cream, add sugar, 50ml water, half of the garlic, simmer the sauce for 5 minutes, and season.
Separately season and pan-fry the medallions until golden brown over high heat. Then add the vegetables and fry for another 3 minutes, then season everything with the remaining garlic. Cook the medallions for another 3-4 minutes and serve with the sour cream sauce.
