Preparation: Fry the flour in butter until golden. Add shallots and garlic, and fry for another 1 minute, stirring. Pour in the wine and cream, simmer the sauce until smooth, stirring with a whisk. Continue to cook until slightly thickened. Then remove the sauce from heat and mix with mustard, salt, ground pepper, and dill.
Cream Sauce with Fish Broth

You will need: 120 ml 33% cream, 350 ml fish broth, 80 g butter, 60 g flour, 3 egg yolks, 15 ml lemon juice, salt.
Preparation: Fry the flour in butter until golden. Stirring constantly, pour in 250 ml of fish broth. Cook the sauce for about 10 minutes after boiling over low heat, continuing to stir. Pour in the remaining fish broth, bring the sauce to a boil again and continue to cook until it reduces by about a third.
Separately, whisk the yolks with cream until fluffy. Pour the cream mixture into the fish sauce in a thin stream, continuing to stir. Lightly heat the sauce, remove it from heat, add lemon juice, and salt to taste.
