1. Fig Jam with Walnuts

Perhaps one of the best preserves you can imagine.

You will need: 1 kg figs, 1 cup walnuts, 1 kg sugar, 1 lemon.

Preparation: Toast the walnuts in a dry pan. Wash and prick the figs with a fork, make incisions on top, and insert the walnuts. Cover the figs with sugar, pour in the lemon juice, and leave overnight. Bring to a boil and simmer the jam for about 40 minutes. Seal in sterilized jars.

2. Pickled Figs for Winter

A classic pickled preserve with spices and vinegar.

You will need: 250 g figs, 1 tsp sugar, 0.25 tsp salt, 2 tbsp 6% vinegar, 150 ml water, 3 clove buds, 2 bay leaves, 5-6 black peppercorns.

Preparation: Wash the figs, trim the stems, and place them in a clean jar. Pour boiling water over them for 10 minutes, then drain the water. Add sugar, salt, and all spices to this water. Bring it to a boil again, pour in the vinegar, then pour the resulting marinade over the figs and seal for winter.

3. Fig Jam with Cognac

A piquant treat for tea, toast, pastries, and pancakes.

You will need: 1 kg figs, 400 g sugar, 120 ml cognac, 80 g lemon.

Preparation: Cut the figs into quarters, and the lemon into thin slices. Add sugar and cognac, and let sit for several hours. Bring the mixture to a boil, add spices if desired. Simmer for 30 minutes over low heat and lightly mash the jam with a potato masher. Distribute into clean jars, sterilize for 10 minutes, and seal for winter.

4. Green Fig Jam for Winter

Green figs are rarely used fresh, but they make excellent preserves.

You will need: 500 g green figs, 1 kg sugar, 300 ml water, 1 tsp wine vinegar.

Preparation: Wash the figs, cover them with a liter of water, bring to a boil, and simmer for 10 minutes over low heat. Then drain the water and rinse the figs with cold water. Cover again and simmer for another 10 minutes. Repeat this procedure one more time.

Make a syrup from 300 ml water and sugar. Slice the figs, pour the syrup over them, and leave overnight. Mash the mixture with a potato masher or blend with an immersion blender, bring to a boil, and cook the jam over medium heat until desired thickness. 3 minutes before the end, pour in the vinegar. Seal the jam in sterilized jars.

Use the ripest fruits that cannot be stored for long.

You will need: 500 g figs, 300 g sugar, 3-4 sprigs of rosemary, 1/2 lemon.

Preparation: Cut the figs into quarters, strip the leaves from the rosemary, and zest and juice the lemon. Cover everything with sugar and leave overnight. Bring the jam to a boil and simmer for 5 minutes. Let it cool and simmer for another 5 minutes. Repeat the procedure 1-2 more times, and after the last cooking, seal the jam in sterilized jars.

You will need: 400 g figs, 100 g sugar.

Preparation: Place the washed figs into a clean jar. Pour boiling water over them for 10 minutes, then drain this water, add sugar to it, and bring to a boil again. Pour the syrup over the figs and seal for winter.

7. Five-Minute Whole Fig Jam for Winter

You will need: 1 kg figs, 700 g sugar, 350 ml water.

Preparation: Make a uniform syrup from water and sugar. Submerge the figs in it, bring to a boil again, and simmer for 5 minutes. Let the mixture cool and simmer for another 5 minutes. Repeat this cycle until the figs reach the desired softness. After the last cooking, seal the hot jam in sterilized jars.

8. No-Cook Figs for Winter

This preserve can only be stored in a cold place for up to six months.

You will need: 300 g figs, 200 g sugar.

Preparation: Wash and arbitrarily chop the figs. Blend them with sugar until smooth. Place the mixture into a sterilized jar and sprinkle another 2-3 spoons of sugar on top. Seal and store.

You will need: 500 g ripe figs, 150 g sugar, 2 pinches of citric acid.

Preparation: Wash and mash the figs with a potato masher or fork. Cover them with sugar, bring to a boil, and simmer the preserve for 10 minutes. Let it cool, bring to a boil again, and reduce to the desired thickness over low heat. Add the citric acid and seal the preserve in a sterilized jar.

10. Fig Sauce for Winter

You will need: 500 g figs, 1 head of garlic, 1 tbsp vinegar, 1 chili pepper, spices.

Preparation: Pass all ingredients through a meat grinder. Add spices to taste and bring the sauce to a boil. Pour in the vinegar, simmer the sauce for 5 minutes, and seal it in a sterilized jar.

11. Fig and Grape Jam

You will need: 1 kg figs, 800 g seedless grapes, 200 ml water, 700 g sugar.

Preparation: Make a syrup from water and sugar. Add the arbitrarily chopped figs and grapes to it. Bring to a boil again and simmer the mixture for 15 minutes over low heat. Let cool, blend everything with an immersion blender, and simmer for another 15 minutes. You can optionally add a little vanilla or cinnamon. Seal the jam in sterilized jars.

For a slight tartness, add a few pinches of citric acid at the end of cooking.

You will need: 400 g figs, 150 g sugar, 100 ml water.

Preparation: Make a uniform syrup from water and sugar. Place the washed figs into it, bring to a boil again, and simmer for 6-7 minutes. Let the mixture cool and simmer for the same amount of time again. Place the fruits into a sterilized jar, bring the syrup to a boil again, pour it over the figs, and seal for winter.
