Source: Ruslan Mitin, AdobeStockDelicious pork tenderloin medallions are highly prized for their neat shape, quick preparation, and tender texture. It's important not to overcook them in the pan to keep the meat juicy. Here's a step-by-step recipe you're sure to love!
Prep time: 35 minutes.
Servings: 8.
Ingredients
- 700-800 g pork tenderloin;
- 2 cloves garlic;
- 2 tablespoons vegetable oil;
- 30 g butter;
- 1 teaspoon dried rosemary;
- 1/2 teaspoon sweet paprika;
- 1/2 teaspoon ground black pepper;
- 1 teaspoon salt.
Step-by-step recipe
- Wash and pat dry the pork with paper towels. Slice the tenderloin into medallions about 3 cm thick each.
- Peel and press the garlic. Mix it with vegetable oil, rosemary, paprika, salt, and ground black pepper.
- Coat the medallions with the marinade and let them marinate for 15 minutes at room temperature.
- Then, heat a skillet over high heat and place the medallions in it. Sear the pork for 2 minutes on each side until golden brown.
- Next, add the butter, reduce the heat to medium, and cook the medallions for another 5-6 minutes, periodically basting them with the melted butter.
- Let the cooked medallions rest for a bit before serving.
