Even classic homemade solyanka can be easily and quickly canned for winter. And in various variations – with cabbage, mushrooms, tomatoes, carrots, or other ingredients. We share 10 of the most successful and proven recipes!

1. Solyanka with Mushrooms and Cabbage for Winter

A classic basic recipe that you can supplement to your taste.

You will need: 3.5 kg mushrooms, 2 kg cabbage, 1 kg carrots and onions each, 1 cup tomato paste, 1 cup vegetable oil, 2 tbsp vinegar, 4 tbsp sugar, 3 tbsp salt, 5 bay leaves, 1 tbsp allspice.

Preparation: Boil mushrooms for 20 minutes in boiling water. Grate, chop, and shred all ingredients to your liking. Put everything except the mushrooms into a pot, add oil, salt, sugar, and tomato paste diluted in 1 liter of water.

Add spices, bring everything to a boil, and simmer for 45 minutes. Add mushrooms and after another 10 minutes, pour in the vinegar. Simmer the solyanka for another 5 minutes and seal in sterilized jars.

2. Solyanka with Chanterelles for Winter

Instead of tomato paste, you can use sauce or ketchup – it doesn't matter.

You will need: 600 g chanterelles, 2 kg cabbage, 4 onions, 1 kg carrots, 1 cup vegetable oil, 1 cup tomato paste, 1 tbsp vinegar, 2 tbsp salt, spices.

Preparation: Parboil chanterelles for 10-15 minutes in boiling water, drain them in a colander, and chop arbitrarily. Shred all vegetables. Mash the cabbage with salt, and fry carrots and onions in oil until soft. Add all other ingredients, except vinegar, and add about a cup of water. Simmer the solyanka for 1-1.5 hours, stirring, pour in the vinegar, and seal it in prepared jars.

3. Solyanka with Tomatoes for Winter

If you prefer fresh tomatoes instead of tomato paste – here's the recipe.

You will need: 1 kg cabbage, 2 kg champignons, 1 kg tomatoes, onions, and carrots each, 100 ml vinegar and vegetable oil each, 2 tbsp sugar, 3 tbsp salt.

Preparation: Grate carrots, shred cabbage, and chop mushrooms with tomatoes and onions. Put everything into a pot, pour in oil, add salt and sugar, and bring the vegetables to a boil. Simmer the preparation for 40 minutes, pour in vinegar, distribute the solyanka into jars, and sterilize them for 15 minutes.

4. Solyanka with Cucumbers for Winter

Optionally, add a little chopped chili and garlic.

You will need: 1 kg cabbage, 1 kg cucumbers, 750 g onions, 500 g carrots, 4 tomatoes, 125 ml vegetable oil, 125 ml vinegar, 2 bay leaves, 4 black peppercorns, 1 cup sugar, 1 tbsp salt.

Preparation: Arbitrarily chop all vegetables, and parboil mushrooms for 15-20 minutes first, then chop. Put all ingredients into a pot, bring to a boil, and simmer the solyanka for about 45 minutes, stirring. Seal it in sterilized jars.

5. Solyanka with Bell Peppers and Tomato Sauce for Winter

You will need: 5 kg cabbage, 2 kg boiled mushrooms, 1.5 kg bell peppers, 500 ml tomato sauce, 1 kg onions, 1 kg carrots, 200 g sugar, 500 ml vegetable oil, 125 g salt, 1 cup water, 1 tbsp vinegar essence.

Preparation: Shred cabbage, grate carrots, and chop the remaining vegetables. Add oil, tomato sauce, water, sugar, salt, and spices. Bring everything to a boil and simmer for 1.5 hours, stirring. Add chopped mushrooms, simmer for another half hour, and pour in the vinegar essence. Distribute the solyanka into jars and seal with lids.

A delicious mushroom-free option for those who don't like or don't eat them.

You will need: 3 kg cabbage, 1 kg carrots, 1 kg onions, 6 bell peppers, 1.5 kg eggplants, 500 g tomato sauce, 350 ml water, 250 ml vegetable oil, 120 g salt, 200 g sugar, 50 ml vinegar, spices.

Preparation: Chop all vegetables to taste. Mix tomato sauce, water, oil, sugar, and salt. Bring this marinade to a boil, add vegetables and spices, reduce heat, and simmer the solyanka for 1.5 hours, stirring. Pour in vinegar and seal it in sterilized jars.

You will need: 1.5 kg slippery jack mushrooms, 1.5 kg cabbage, 700 g carrots, onions, and tomatoes each, 150 ml vegetable oil, 20 ml vinegar, 50 g sugar, 60 g salt, 100 g tomato paste, spices, 2 bay leaves.

Preparation: Boil slippery jack mushrooms for 15 minutes in boiling water, and chop as desired. Chop cabbage and fry it for 10 minutes in oil over medium heat. Then simmer it for another 10 minutes under a lid over low heat.

Chop onions and carrots, fry them separately until golden, then add to the cabbage. Blend tomatoes, pour them in, and then add the remaining ingredients, except vinegar. Simmer the solyanka for 30 minutes, stirring, pour in vinegar, and seal in prepared jars.

For those who prefer more vegetables in their preserves.

You will need: 1.5 kg boiled mushrooms, 1.5 kg onions, cabbage, carrots, and cucumbers each, 2 kg tomatoes, 1 kg bell peppers, 200 ml vegetable oil, 250 ml vinegar, 7 tbsp sugar, 9 tbsp salt, spices.

Preparation: Peel tomatoes. Chop all vegetables and mushrooms to your taste. Fry onions in oil, after 5 minutes add carrots, after another 10 – mushrooms, and after another 5 – cabbage. Simmer everything for half an hour and add the remaining vegetables, salt, sugar, and spices. Simmer for another 20 minutes, pour in vinegar, and seal the solyanka in sterilized jars.

9. Solyanka with Pickled Cucumbers for Winter

An original solyanka that is also suitable for preparing other first courses.

You will need: 2 kg cabbage, 5 pickled cucumbers, 2 kg mushrooms, 500 g onions, 1 kg carrots, 500 ml vegetable oil, 1 cup tomato sauce, 1/2 cup vinegar, 1 cup sugar, 80 g salt, spices.

Preparation: Boil mushrooms for 15 minutes in boiling water and chop. Grate cucumbers and shred the remaining vegetables. Heat oil, put cabbage in it and fry for 5 minutes. Add all other ingredients, mix thoroughly, and simmer the solyanka for about 1 hour over low heat. Seal it in prepared containers for winter.

10. Solyanka with Sauerkraut for Winter

And for an even brighter and more original taste – we suggest adding salted cucumbers.

You will need: 2 kg sauerkraut, 1 kg mushrooms, 300 g onions, 500 g salted cucumbers, 150 g tomato paste, 50 ml vegetable oil, 150 g sugar, 70 ml vinegar, 300 ml water, spices.

Preparation: Boil mushrooms for 15 minutes in boiling water in advance. Arbitrarily chop all ingredients. Fry onions in oil until soft, add mushrooms and fry for another couple of minutes. Squeeze the sauerkraut and add it there.

Also add salted cucumbers, sugar and spices to taste, and tomato paste diluted in water. Simmer everything together for 1-1.5 hours over low heat and finally pour in the vinegar. Distribute the solyanka into sterilized jars and seal with lids.
