1. Classic Baklava

Baklava recipes vary in different countries, but the basic principles remain the same.

You will need: 500 g flour, 200 g sour cream, 200 g soft butter, 2 eggs, 2.5 cups nuts, 2.5 cups sugar, 100 g melted butter, 1 tsp baking powder, 150 ml water, 50 g honey, spices.

Preparation: Whisk the soft butter with one egg and sour cream. Add the sifted flour with baking powder, knead the dough, and refrigerate. Grind any favorite nuts, spices, and 1.5 cups of sugar in a blender.

Divide the dough into 4 parts and roll them into thin layers. Place one layer in a greased pan, sprinkle with nuts, cover with the second layer – and so on until the end. Brush the last layer of dough with egg, mark future portions with a knife, and decorate the baklava with whole nuts.

Bake for 15 minutes in the oven at 200 degrees Celsius. Take it out and cut the portions, without cutting through the last layer of dough. Pour melted butter over everything and return to the oven for another 35-40 minutes. Heat water with the remaining sugar, add honey, and pour this syrup over the finished baklava along the cuts. Leave it to cool completely.

Preparation: Pour warm milk, egg, and 50 g melted butter into the sifted flour. Knead the dough thoroughly and let it rest for half an hour. During this time, grind the nuts in a blender and mix them with cinnamon and powdered sugar.

Divide the dough into 20-25 small pieces, roll each thinly, and brush with soft butter. Sprinkle with nut filling and roll into very thin rolls. Place the rolls tightly next to each other on a greased baking sheet. Brush them with egg yolk whisked with a spoonful of water.

Bake for 15 minutes in the oven at 200 degrees Celsius. Pour the remaining melted butter over it, return to the oven, reduce the temperature to 170 degrees Celsius, and bake for about 1 hour more.
