Preparation:
1. Cover the chicken with water, bring to a boil, and skim off the foam. Add peppercorns, a whole red onion, half the salt, and parsley stems, then simmer for 40 minutes over low heat. Add bay leaves and cook for another 10 minutes.

2. Pass cilantro, garlic, and walnuts through a meat grinder or blend in a food processor.
