This thick and aromatic solyanka can easily be prepared even when you don't have meat on hand – a pack of sausages will be perfectly sufficient. We're sharing 12 simple recipes, so take note!

You will need: 4 sausages, 2 potatoes, 2 carrots, 1 onion, 2 tbsp tomato paste, 2 pickled cucumbers, 1 handful of olives, spices.

Preparation: Boil water and add diced potatoes. Slice sausages into rounds, lightly fry them, and add to the potatoes. Separately, sauté chopped onion and grated carrots for 7-10 minutes.

Add tomato paste and simmer for another 7-10 minutes. Slice olives and cucumbers into rounds, add them along with the sautéed vegetables to the potatoes, and cook the solyanka for 20 minutes over low heat. Season to taste.

For this recipe, we recommend mixing several different types of sausages.

You will need: 200 g sausages, 200 g hunter's sausages, 4 potatoes, 1 onion, 200 ml tomato juice, 2 pickled cucumbers, 1.5 tbsp tomato paste, 1 handful of black olives, 3 lemon slices, spices, and herbs.

Preparation: Boil water, add diced potatoes, and cook until almost done. Slice all sausages and hunter's sausages, fry until golden, and add them to the potatoes. In the same pan, sauté chopped onion until golden, add finely chopped cucumbers, fry for another 1 minute, and add tomato paste. Fry for another 2-3 minutes, pour in tomato juice, and bring to a boil.

Add this sautéed mixture to the pot, season the solyanka, and cook for another 5 minutes. Add thinly sliced black olives, lemon, and herbs. Remove from heat and let the solyanka steep for another 20 minutes with the lid on.
