You will need: 500g melon, 8 tbsp water, 4 tbsp lemon juice, 6 tbsp sugar.

Preparation: Boil water and sugar to make a syrup, then let it cool. Blend the melon pulp until smooth. Add lemon juice and sugar syrup, and blend again. Pour the mixture into a container and freeze for 4-6 hours. During the first 2-3 hours, stir the sorbet every 30 minutes.

2. Candied Melon

Making candied melon takes a little time, but they store well afterwards.

You will need: 1 kg melon, 1.2 kg sugar, 400 ml water, 1.5 g citric acid.

Preparation: Peel and cut the melon into pieces. Make a syrup from water and sugar, pour it over the melon, and let it sit for 12-20 hours. Then bring to a boil, simmer for 5 minutes, and let it cool completely again. Repeat this step 2-3 more times. During the last boil, add citric acid. Drain the candied melon in a colander, let them drip dry, then spread them on parchment paper and dry in the sun or in a slightly open oven at 80 degrees Celsius.

You will need: 1 melon, 80-100g sugar, 3 cm ginger, 80 ml water, 0.5 tsp vegetable oil.

Preparation: Grate the ginger and lightly fry half of it in oil with a spoon of sugar. Make a syrup from water and the remaining sugar, add all the ginger, simmer for another 10 minutes, and strain the syrup through a sieve. Cut the peeled melon into cubes, pour this syrup over it, and refrigerate for several hours.
