Preparation: Make a syrup from water and sugar, simmer for about 5 minutes, let it cool to room temperature, and refrigerate for 1 hour. Blend watermelon flesh until smooth, add the sugar syrup with lime juice, and blend again. Pour the mixture into a container and place in the freezer. For the first 1.5 hours, stir the sorbet every half hour, then let it freeze for another 1-2 hours.

4. Chocolate-Dipped Watermelon

You will need: 200 g watermelon flesh, 150 g condensed milk, 500 ml milk, 20 g sugar, 20 g gelatin.
Preparation: Blend watermelon flesh until smooth. Dissolve 10 g gelatin in a few tablespoons of water according to instructions. Heat milk to a boil, mix it with gelatin, then add condensed milk and half of the watermelon puree.
Strain the milk jelly through a sieve, pour into molds, and refrigerate. Dissolve the remaining gelatin in 3-4 tablespoons of water and mix it with sugar and the remaining watermelon puree. Pour this layer on top and refrigerate the dessert again.

Preparation: Cut the watermelon in half and scoop out all the flesh. Lightly blend the flesh and squeeze out the juice using cheesecloth – you should get about 2.5 liters. Heat 1 liter of this juice almost to a boil, add agar-agar, stir, and let it steep.
Mix the remaining juice with sugar, bring to a boil, then remove from heat and mix with the agar-agar mixture. Wash and arbitrarily cut the other fruits, arrange them in the watermelon halves, pour in the juice, and refrigerate until set.
8. Candied Watermelon Rind

You will need: 1 kg watermelon rinds, 1.2 kg sugar, 1 lemon, 750 ml water.
Preparation: Peel the green skin from the watermelon rinds and cut them into medium-sized sticks. Slice the lemon with the peel. Cover everything with water, boil for 10 minutes after coming to a boil, and drain.
Make a syrup from sugar and 750 ml water. Pour the syrup over the rinds, let sit for 12 hours, and bring to a boil. Simmer for 15 minutes and let sit for another 12 hours.
