You will need: 1 kg pork ribs, 500-600 g potatoes, 2 onions, vegetable oil, salt, cumin, paprika, basil, thyme, mixed peppers.

Preparation: Thoroughly rub the ribs with all the spices and aromatic herbs, then let them marinate in this mixture for 20 minutes. Cut the potatoes into large pieces and season them lightly as well.

Sear the pork ribs in oil until golden brown, add the chopped onion and the rest of the ingredients, pour in 100-120 ml of water, and close the kazan with the lid. Heat it over high heat, and when steam appears, reduce the temperature. Cook the ribs for 35-40 minutes, then release the steam before opening the Afghan kazan.

You will need: 1 kg pork ribs, 6 potatoes, 2 tbsp tomato paste, 2 cloves garlic, 1 cup water, adjika, vegetable oil, salt, spices.

Preparation: Slice the onion into half-rings, cut the potatoes in half, and remove the white membrane from the ribs. Mix water, tomato paste, and adjika to taste. Sear the pork ribs in oil until browned, add all other ingredients, and close the kazan. Heat it until steam appears over high heat, reduce the heat, and cook everything together for another 30-40 minutes. Then release the steam and only then open the Afghan kazan.

3. Pork Ribs with Vegetables and Dried Fruits in an Afghan Kazan

You will need: 800 g pork ribs, 500 g potatoes, 2 carrots, 2 onions, 100 g prunes, 100 g dried apricots, 150 ml water, 2 cloves garlic, 25 ml vegetable oil, salt, spices.

Preparation: Pour boiling water over the dried fruits for 10 minutes and rinse them. Shred the onion and carrot, and cut the potatoes into sticks. Divide the ribs into serving portions. Lightly sauté the onion and carrot in vegetable oil directly in the kazan, season, then add the pork ribs and all other ingredients.

Next, close the Afghan kazan with the lid and place it over maximum heat. When steam appears, reduce the temperature and cook the dish for another 30-35 minutes. Then carefully release the steam and open the kazan.

You will need: 1.5 kg pork ribs, 200 ml broth, 2 tsp paprika, 2 tsp curry, 2 tsp turmeric, salt, ground red pepper, vegetable oil.

Preparation: Cut the pork ribs into serving pieces and sear them on all sides in the kazan. Add all the spices, mix thoroughly, pour in the broth, and close the Afghan kazan with the lid. When steam starts to escape, reduce the heat and cook the ribs for approximately another 30 minutes. Open the kazan only after releasing the pressure.
