You'll need: 1 kg beef or pork, 1 kg potatoes, 2 onions, 100 ml water, vegetable oil, salt, chili flakes, spices.
Preparation: Roughly chop the meat and potatoes and mix everything with salt and spices. Thinly slice the onions and place them in the kazan with a little oil. Then add the meat and potatoes and pour in the water. Cover the Afghan kazan with the lid, bring to a boil over high heat, then simmer for 45-50 minutes over moderate heat.

You'll need: 1 kg meat of your choice, 7-10 potatoes, 2 bell peppers, 300 g mushrooms, 4 tomatoes, 2 onions, vegetable oil, salt, khmeli suneli, spices.
Preparation: Cut all ingredients into medium pieces. Lightly fry the onion directly in the kazan, then place the meat on top. On the meat – potatoes, and then – the rest of the ingredients. Add salt and spices to taste, pour in 100-150 ml of water, close the Afghan kazan with the lid, and simmer the potatoes with meat for about 45 minutes over medium heat. Then release the steam from the kazan and open the lid.

Mix water, tomato paste, and a little more spices, pour this mixture over the potatoes with meat, cover the kazan with the lid, and bring to a boil. Cook for 50 minutes over medium heat, then release the steam and open the lid.

5. Potatoes with Meat and Wine in an Afghan Kazan

You'll need: 1.5 kg beef or pork, 150 g lamb fat, 1 kg potatoes, 500 g tomatoes, 2 carrots, 2 onions, 500 ml meat broth, 1 glass red table wine, 3 sprigs thyme, 4 cloves garlic, 1 chili pepper, 3 tbsp flour, 3 cloves, 3 bay leaves, vegetable oil, salt, spices, aromatic herbs.
Preparation: Finely chop and render the lamb fat directly in the Afghan kazan, and fry thinly sliced onions until lightly golden. Cut the meat into medium pieces and mix it with flour, salt, and spices, then add the meat to the sautéed onions and continue frying until browned.
Pour in the wine and cook for another 1-2 minutes to evaporate the alcohol. Add coarsely chopped vegetables, garlic, hot pepper, thyme, and all spices. For convenience, spices can be wrapped in a cheesecloth bag.
Pour in the broth, close the kazan with the lid, and bring to a boil. Then reduce the heat and cook the potatoes with meat for 40-45 minutes over medium heat. Next, release the pressure and only then open the kazan.

6. Potatoes with Meat and Eggplant in an Afghan Kazan

You'll need: 1 kg beef or lamb, 6 potatoes, 2 tomatoes, 2 bell peppers, 1 eggplant, 1 carrot, 1 onion, 1 head garlic, 100 ml water or beer, vegetable oil, salt, spices.
Preparation: Cut all ingredients into medium or large pieces. Pour a little vegetable oil into the kazan and layer the onion, then the carrot and half of the bell pepper. Add the meat pieces, season to taste, then arrange the garlic and the rest of the vegetables. But the top layer should be potatoes!
Season again, pour in water or beer, close the Afghan kazan with the lid, and bring to a boil. When steam starts to escape, reduce the heat and simmer the stew for about 1 more hour.

Preparation: Chop the onion and carrot and lightly fry them in the Afghan kazan in a mixture of both oils. Layer the chopped potatoes, and on top of them – pieces of meat rubbed with spices. Close the kazan, bring to a boil, and cook for another 45 minutes over medium heat. At the end of cooking – release the steam and only then open the lid.

You'll need: 1 chicken, 6 potatoes, 2 carrots, 2 bell peppers, 3 onions, 4 cloves garlic, vegetable oil, salt, spices.
Preparation: Cut the chicken into pieces and chop the vegetables. Pour a little oil into the kazan and layer the onion, then the carrot. Then – chicken, bell pepper with garlic, and on top – potatoes. Sprinkle the layers with spices. To get more broth – pour in 1 glass of water, but this is not necessary. Close the Afghan kazan with the lid, bring to a boil, and cook for about 30-40 more minutes over medium heat.
