Aronia berries have far more uses than might initially appear. For example, beyond standard preserves, compotes, and jams, you can make excellent wine from them. Yes, even at home without special equipment. We share 8 simple recipes!

1. Aronia Berry Wine with Raisins

It's important that the raisins are unwashed – they provide the necessary fermentation.

You will need: 5 kg aronia berries, 2 kg sugar, 1 liter water, 50 g raisins.

Preparation: Mash the aronia berries with a pestle, without washing them. Mix with raisins and 1 kg of sugar, then place in glass containers. Cover with cheesecloth and leave in a warm, dark place for 1 week. Stir the mixture a couple of times a day.

Press the juice through cheesecloth, filter, and pour into a bottle with an airlock. Pour warm water over the pomace, add the remaining sugar, cover with cheesecloth, and leave for another week following the same principle. Strain the pomace again and add this liquid to the bottle with the juice.

Continue to age the wine in a dark place, filtering it every 2-3 days until no more sediment forms. Bottle the clear wine, cork it, and leave to mature in a dark, cool place for 2-4 months.

2. Aronia Berry Wine with Yeast

Special wine yeasts are available and easy to find.

You will need: 6 kg aronia berries, 3 kg sugar, 2 liters water, 30 g wine yeast.

Preparation: Extract juice from the aronia berries using any available method, then pour hot water over the pomace and let it steep for a couple of hours. Strain the pomace and mix with the juice. Add 1.5 kg of sugar and the yeast, and mix everything thoroughly. Pour the mixture into a bottle with an airlock and store in a warm, dark place for 1 week.

Filter the mixture, add the remaining sugar, cover again with an airlock, and leave for another week. If you prefer a sweeter wine, add sugar using the same principle 1-2 more times to taste. Wait for fermentation to complete, rack the wine off the sediment, and bottle it.

Leave the bottles for a couple of months in a cool place. Periodically filter the drink as sediment forms and re-bottle into clean bottles. When no more sediment forms, the wine can be filtered one last time, corked, and left to mature for another couple of months.

3. Quick Aronia Berry Wine

Of course, this isn't a classic wine, but it's tasty and quick.

You will need: 1 kg aronia berries, 1 liter water, 500 ml vodka, 1/2 cup sugar, 2 cloves, a pinch of citric acid and cinnamon each.

Preparation: Pour half the water over the aronia berries, add sugar, and simmer for half an hour. Strain through a sieve, then pour the remaining water over the pomace, add spices and citric acid, and simmer for another half hour. Press again and mix with the first decoction. Add vodka, mix everything, and bottle.

You will need: 2 kg aronia berries, 1 kg apples, 3 kg sugar, 2 liters water.

Preparation: Peel the apples, sort the aronia berries, and blend everything. Add water and one-third of the sugar, mix, cover with cheesecloth, and leave for a week in a warm, dark place. Stir the must 2-3 times a day.

Strain the mixture, pour into clean jars, and seal with an airlock or a glove with a hole in the finger. Place everything in the same spot for another week. Drain 500 ml of the must and dissolve half of the remaining sugar in it. Pour it back into the wine and leave under an airlock for another week. Then, add the remaining sugar in the same way.

Wait for the sediment to settle, rack the wine off it without disturbing, and bottle into clean bottles. Store the wine in a cool, dark place for 3-5 months. Periodically continue to rack it off the sediment. Once ready, bottle the wine again into clean bottles, cork, and store.

You will need: 2.8 kg sugar, 2.2 kg aronia berries, 1.2 kg pears.
