Preparation: Soak the mushrooms in warm water for 4-5 hours, rinse, pat dry, and slice. Grate the carrot on a Korean grater, mince the garlic using any convenient method, and for the dressing, mix soy sauce, rice vinegar, vegetable oil, and ground pepper. Combine all ingredients.
2. Wood Ear Mushroom and Green Onion Salad

You will need: 80 g dried wood ear mushrooms, 2 bunches green onions, 1 chili pepper, 4 cloves garlic, 2-3 tbsp rice vinegar, 2 tbsp soy sauce, 2 tsp sesame oil, 2 tsp sugar, sesame seeds.
Preparation: Soak the wood ear mushrooms in warm water for at least 3-5 hours, then drain the water, pour fresh boiling water over them, and leave for another 5 minutes. After that, rinse the mushrooms thoroughly with cold water, pat dry, and cut into pieces.
Finely chop the green onions, garlic, and chili, and mix everything with the mushrooms. For the salad dressing, mix soy sauce, rice vinegar, sugar, and sesame oil. Sprinkle the finished salad with sesame seeds and serve.

3. Wood Ear Mushroom and Bell Pepper Salad

Preparation: Soak the dried mushrooms in warm water overnight, rinse, and pat dry. Thinly slice and sauté the onion with garlic in vegetable oil. Season to taste, pour in soy sauce and vinegar, and heat slightly more. Grate the carrot on a Korean grater, slice the bell pepper into strips, and mix all ingredients together.

Preparation: Pour boiling water over the wood ear mushrooms for 20 minutes, rinse, and slice. If desired, boil them for an additional 3-4 minutes in boiling water. Grate the carrot on a Korean grater, mix with salt and sugar, and let stand for 20 minutes.
Heat vegetable oil with all the spices, pour it over the carrots with mushrooms and garlic, and mix. Pour in the rice vinegar, mix again, and let the salad infuse in the refrigerator for at least a few hours.

5. Funchoza and Wood Ear Mushroom Salad

Preparation: Soak the wood ear mushrooms in boiling water for half an hour, rinse, and slice. Prepare the funchoza according to package instructions, grate the carrot, slice the onion into feathers, and finely chop the garlic.
