Slice the pears and arrange them on the tart base. Bake in the oven for 10 minutes at 180 degrees Celsius. Whisk together the egg yolks, milk, and all remaining sugar. Bring the cream to a boil and simmer for 2 minutes, stirring. Pour it over the pears and return the tart to the oven for another 25-30 minutes.
