You will need: 2 kg beetroot, 2 L water, 50 g salt, 5 g citric acid.

Preparation: Boil the beetroot for about 20 minutes, so it remains slightly undercooked inside. Peel and grate the beetroot, then tightly pack it into prepared jars. Boil a marinade from water, salt, and citric acid, pour it over the beetroot, and sterilize the jars for another 30 minutes in boiling water or by any other convenient method. Seal for winter.

You will need: 1 kg beetroot, 1 L water, 50 ml vinegar, 40 g sugar, 40 g salt, 3 allspice peppercorns, 3 clove buds, and 1 bay leaf per jar.

Preparation: Boil the beetroot for 20-30 minutes, peel, and grate it. Arrange the beetroot, allspice, cloves, and bay leaf in jars. Boil a marinade from water, sugar, and salt, pour in the vinegar, stir, and pour over the beetroot. Sterilize the jars for another 10-15 minutes and seal.

3. Beetroot with Vegetable Oil for Borsch

Another tried and tested recipe, so you can choose the option you like best.

You will need: 1.5 kg beetroot, 60-80 ml vegetable oil, 3 tbsp sugar, 1 tsp salt, 1 tsp lemon juice.

Preparation: Boil, peel, and grate the beetroot. Add the remaining ingredients, mix, and simmer for about 15 minutes. Then seal the resulting borsch dressing in sterilized jars for winter.

Preparation: Boil or bake the beetroot, grate it or cut into thin strips. Arrange the beetroot in sterilized jars, layering with garlic cloves and bay leaf. Boil a marinade from water, sugar, salt, and pepper, add vinegar, and pour over the beetroot. Seal the jars for winter.

5. Beetroot with Onion and Carrots for Borsch in Winter

A complete ready-made base for borsch, so you don't have to make a separate sauté.

You will need: 200 g beetroot, 200 g carrots, 200 g onions, 2 cups tomato juice, 2 cloves garlic, 10 tbsp vegetable oil, 20 ml vinegar, 2 tsp salt, 2 tsp sugar, spices.

Preparation: Chop all vegetables exactly as you would for borsch. Sauté the onion in vegetable oil until soft, add beetroot and carrots, and fry for a few more minutes. When the vegetables are soft, pour in the tomato juice and add salt, sugar, and spices.

Simmer everything together for about 1 hour over low heat, covered, and at the end of cooking – add minced garlic and vinegar. Simmer for another 5-7 minutes and seal the dressing in sterilized jars.

6. Beetroot with Tomatoes and Bell Peppers for Borsch

Add spices, garlic, or herbs to your liking.

You will need: 3 beetroots, 4 tomatoes, 2 carrots, 2 bell peppers, 2 onions, 100-120 ml vegetable oil, 3 tbsp vinegar, 1 tbsp sugar, 1 tbsp salt.

Preparation: Chop all vegetables – as you would for borsch. Sauté the onion in vegetable oil until translucent, add carrots and simmer for another 3 minutes. Then add bell peppers, and after another 3 minutes – beetroot. Following that – chopped or grated tomatoes, salt, and sugar. Simmer everything together for another 20-30 minutes, but 5 minutes before the end of cooking – pour in the vinegar, stir, and seal in sterilized jars for winter.

You will need: 1.5 kg beetroot, 1 kg cabbage, 500 g carrots, 500 g onions, 500 ml water, 500 ml vegetable oil, 1.5 tsp vinegar essence, 1 tbsp salt, 1 tsp sugar, spices.

Preparation: Chop the onion, shred the cabbage, and grate the carrots and beetroot. Put all ingredients into a pot, simmer the preparation for about 1 hour over low heat, and seal in sterilized jars for winter.

You will need: 2.5 kg beetroot, 1 kg tomatoes, 1 kg bell peppers, 500 g green apples, 500 g carrots, 25 g garlic, 200 ml vegetable oil, 3 tbsp sugar, 2 tbsp salt.

Preparation: Peel the vegetables, grate the beetroot, apples, and carrots, chop the bell peppers, and finely dice the tomatoes. Sauté the beetroot in vegetable oil for about 10 minutes, add carrots, and after another 10 minutes – the remaining ingredients. Simmer everything together for about 1 hour and seal the prepared borsch dressing in sterilized jars for winter.
