Braised Potatoes with Meat in an Afghan Kazan – Step-by-Step Recipe

In an Afghan kazan, it turns out especially well because all ingredients cook simultaneously and exchange flavors. The meat becomes very tender, and the potatoes literally melt in your mouth. Ingredients
- 800 g pork;
- 1.2 kg potatoes;
- 2 carrots;
- 2 bell peppers;
- 2 onions;
- 2-3 tomatoes;
- 3 cloves garlic;
- 1-2 teaspoons potato seasoning;
- 1 teaspoon salt;
- 1/2 teaspoon ground black pepper;
- vegetable oil for frying.
Step-by-step recipe
- Rinse the pork, pat dry with paper towels, and cut into large, uniform pieces. Peel and roughly chop all vegetables, finely mince the garlic.
- Place the Afghan kazan with oil on the stove, heat it, and fry the meat until browned, stirring occasionally.
- Add the onion and garlic, cook for a few minutes, then add salt and all spices. Stir and cook for another 2-3 minutes.
- Next, layer the bell pepper and carrots, then the tomatoes on top, and finally the potatoes. Lightly salt again if desired and pour in 50-75 ml of water.
- Close the Afghan kazan with the lid, bring to a boil, and reduce the heat. Braise the potatoes with meat for approximately 30 minutes, turn off the stove, and leave the kazan closed for another 15-20 minutes.
- Release the steam through the valve and only then open the kazan.
