You will need: 500 g apricots, 500 g sugar, 1 glass of water.

Preparation: Remove the pits from the apricots. Boil a syrup from water and sugar, pour over the apricots, and leave for 10-12 hours. After that, bring to a boil, simmer for 5-7 minutes, and again leave for 10-12 hours.

Repeat this 3-4 times, then drain the apricots in a colander and let them drip thoroughly. Spread them in a single layer on a dish and leave them in the fresh air until they dry. Store the finished candied apricots in glass jars.

You will need: 500 g apricots, 250 g sugar, 50 ml water.

Preparation: Remove the pits from the apricots, sprinkle the halves with sugar, and leave for 10-12 hours. After that, pour in the water, bring to a boil, and remove the pot from the heat. Let the apricots steep for 8 hours and then drain them in a colander.

Bring the sugar syrup to a boil once more, add the apricots, and simmer for 5 minutes. Remove from heat, leave for 2 hours, and drain again in a colander. Arrange the fruits on dehydrator trays and dry according to instructions for about 8-12 hours.

You will need: 1 kg apricots, 2 glasses of sugar, 3 g citric acid, 1.5 glasses of water.

5. Candied Apricots with Lemon Juice

Don't discard the leftover syrup; use it for other preparations.

You will need: 1 kg apricots, 400 g sugar, 1 tbsp lemon juice, 100 ml water.

Preparation: Cut the apricots in half and remove the pits. Boil a syrup from water and sugar, and add lemon juice to it. Place the apricots in the resulting syrup and cook for 3 minutes. After that, remove the pot from the heat, but leave the apricots in the syrup for another 4-6 hours.

Repeat the previous step 2 more times, but after the last cooking – leave the apricots to infuse overnight. Drain them in a colander and let them drip. Arrange the prepared apricots on dehydrator trays and dry according to instructions for up to 16 hours at 40-50 degrees Celsius.
