If desired, add any spices of your choice to the preparation.

You will need: 1 kg green peas, 500 ml water, 1 tsp vinegar, 1 tsp salt, 1 tsp sugar.

Preparation: Rinse and boil the peas for 10 minutes in boiling water. Separately, boil 500 ml of water with salt and sugar, remove from heat, and pour in the vinegar. Place the hot peas into sterilized jars, pour the prepared marinade over them, and seal for winter.

2. Canned Peas with Citric Acid for Winter

A pinch of citric acid helps preserve the beautiful green color.

You will need: 1 kg green peas, 1 liter water, 2 tbsp vinegar, 1 tbsp salt, 1 tbsp sugar, 1-2 pinches citric acid.

Preparation: Rinse the green peas and pour boiling water over them, bring to a boil, and cook for 10-20 minutes. Cooking time depends on the peas' tenderness and maturity. Separately, prepare a marinade from 1 liter of water, salt, sugar, vinegar, and citric acid. Drain the peas in a colander, fill sterilized jars up to the shoulders, pour the boiling marinade over them, and seal for winter.

3. Canned Peas without Vinegar for Winter

We recommend storing the finished peas in a dark, cool place.

You will need: 1 kg green peas, 1 liter water, 1-2 tsp citric acid, salt, sugar.

Preparation: Boil a brine from water, 2 tbsp salt, and 2 tbsp sugar. Add the peas to it, bring to a boil again, and cook for 10-15 minutes, skimming off any foam.

After that, drain the peas in a colander, strain the broth, and add another 500 ml of boiling water to it. Add another 1 tsp each of salt and sugar and bring to a boil again. Distribute the peas into sterilized jars, add about 0.5 tsp of citric acid to each, and pour the boiling brine over them. Seal for winter.

4. Canned Peas with Carrots

A very vibrant and appetizing preparation that will definitely come in handy in winter.

You will need: 1 kg green peas, 1 kg carrots, 2 liters water, 100 ml vinegar, 2 tbsp salt, 4 tbsp sugar, 4 g citric acid, allspice berries.

Preparation: Soak the peas for several hours, then blanch them for 2-3 minutes in boiling water. Peel and slice the carrots into rounds or dice. Arrange the green peas, carrots, and allspice in prepared jars.

Separately, boil water with salt and sugar, add vinegar and citric acid, stir, and pour the resulting marinade over the preparations. Sterilize everything for another 15-20 minutes in a pot of boiling water and seal for winter.

5. Canned Peas with Cucumbers for Winter

The ideal preparation for Olivier salad – two ingredients in one jar.

You will need: 500 g cucumbers, 200 g green peas, 800 ml water, 1.5 tbsp vinegar, 1 tbsp salt, 1 tbsp sugar, 2-3 cloves garlic, 3 sprigs dill, 2 clove buds, 3 allspice berries, 1 aspirin tablet.

Preparation: Boil the peas for 3-4 minutes in boiling water. Place garlic, dill, allspice, and cloves into a sterilized jar. Then add the cucumbers, sprinkle green peas on top, pour boiling water over everything, and leave for 10 minutes.

After that, drain this water into a saucepan and add salt and sugar to it. Bring to a boil again, pour in the vinegar, and pour the resulting marinade over the preparation. Add the aspirin to the jar and seal the peas for winter.
