Chicken Liver Pâté with Caramelized Onions – Step-by-Step Recipe

Ingredients
- 600 g chicken liver;
- 2 large onions;
- 80 g butter;
- 2 tablespoons vegetable oil;
- 1 tablespoon sugar;
- 50 ml cream, 20% fat;
- 1 teaspoon salt;
- 1/2 teaspoon ground black pepper;
- 1/4 teaspoon ground nutmeg.
Step-by-step recipe
- Peel and slice the onions into thin half-rings, sauté them in vegetable oil until soft, then add sugar and cook for another 5-7 minutes, stirring, until they achieve a beautiful caramel color.
- Rinse and pat dry the chicken liver, remove any membranes, and sauté it separately in half of the butter until cooked through. This will take about 8-10 minutes.
- Combine the fried liver with the caramelized onions, add the remaining butter, cream, salt, ground black pepper, and nutmeg.
- Blend everything until smooth. If the pâté seems too thick, add a little more warm cream.
- Transfer the finished chicken pâté to a plastic container and refrigerate for at least 2 hours before serving.
