You can eat it as is, serve it with pancakes, or use it in baking.

You will need: 2 kg cloudberries, 2 kg sugar, 1 glass of water.

Preparation: Boil water and sugar to make a uniform syrup, then add the cloudberries. Bring to a boil again and simmer for half an hour over low heat, stirring occasionally. Strain the mixture through a sieve, cook for another 7-8 minutes, and seal in sterilized jars.

It's best to use a dry, tart wine.

You will need: 2 kg cloudberries, 8 glasses of sugar, 3 glasses of dry white wine, 1 lemon.

Preparation: Rinse and dry the cloudberries, sprinkle them with lemon juice, and add half of the sugar. Cover the berries with gauze and leave overnight.

Afterward, bring the mixture to a boil, simmer for 15-20 minutes over low heat, pour in the wine, and cook for another 2-3 minutes. Distribute the berries into sterilized jars, add the remaining sugar to the boiling wine syrup, and cook until dissolved, about 10 more minutes. Pour the syrup over the cloudberries and seal for winter.

You will need: 2 kg cloudberries, 2 kg sugar, 3 glasses of water.
