Ingredients
- 2 eggplants;
- 3 tablespoons cornstarch;
- 2 tablespoons vegetable oil;
- 2 cloves garlic;
- 1 teaspoon sweet paprika;
- 1/2 teaspoon ground black pepper;
- 1 teaspoon salt.
Step-by-step recipe
- Wash the eggplants and cut them into large sticks. Salt them, let sit for 15 minutes, then rinse and pat dry with paper towels.
- In a separate bowl, mix the vegetable oil with paprika, ground black pepper, salt, and garlic pressed through a garlic press.
- Pour the prepared marinade over the eggplants, mix, add the cornstarch, and mix well again.
- Arrange the eggplants in a single layer in the air fryer basket, leaving a small space between them, and cook for approximately 18-20 minutes at 200 degrees Celsius (390°F). Flip them halfway through with a spatula.
