You will need: 2 daikon radishes, 200 ml apple cider vinegar, 200 ml water, 4 tbsp sugar, 2 tbsp lemon zest, hot chili pepper, salt.

Preparation: Peel and slice the daikon thinly. Mince the lemon zest and hot pepper, then mix the water with apple cider vinegar, sugar, and salt until dissolved. Arrange everything in sterilized jars, seal for winter, and store in the refrigerator or cellar.

You will need: 1.5 kg daikon, 700-800 g carrots, 2 onions, 3-4 cloves garlic, 80 ml vegetable oil, 50 ml vinegar, 2 tbsp sugar, 2 tbsp salt.

Preparation: Thinly slice the onion and grate the carrots and daikon on a Korean grater. Mince the garlic and thoroughly mix all ingredients from the recipe. Let the salad sit for about 1 hour, then transfer it to prepared jars and sterilize for another 15 minutes in boiling water. Seal for winter.

3. Spicy Daikon for Winter

An original preserve with a unique taste.

You will need: 1.5 kg daikon, 150 ml sake or vodka with water in a 1:1 ratio, 150 g sugar, 1-2 chili peppers, 4-6 cloves garlic, 1.5 tbsp cranberries, 3 sprigs parsley, 35 g salt, 1 tsp turmeric, orange peels, 750 ml water

Preparation: Slice the daikon into rounds or julienne, mince the garlic, parsley, zest, and hot pepper. Add cranberries and turmeric, mix everything thoroughly, and arrange the mixture in sterilized jars. Prepare a marinade from water, sake, and salt. Pour it over the daikon and seal for winter.

4. Grated Daikon with Herbs for Winter

Stores perfectly all winter and easily complements even a festive table.

You will need: 1 kg daikon, 1 head garlic, 2 bunches fresh herbs, 50-60 ml vinegar, 100 ml vegetable oil, 15 g salt, 15 g sugar, spices.

Preparation: Grate the daikon and mince the garlic with herbs. Mix all ingredients and let the mixture sit for 2 hours. Then transfer the salad to clean, dry jars, sterilize for 20 minutes, and seal for winter.

You will need: 200 g daikon, 200 ml rice vinegar, 2 tbsp sugar, 2 tsp salt, saffron.

Preparation: Cut the daikon into sticks and arrange them in sterilized jars. Pour 5-6 tbsp of boiling water over a few pinches of saffron and let it steep for a while. Then filter the saffron water and mix it with rice vinegar, sugar, and salt until dissolved. Pour the resulting marinade over the daikon, close with lids, leave in a warm place for 7 days, and then store the finished preserve in a dark, cold place.
