Eggplant and Zucchini Baked in an Air Fryer – Step-by-Step Recipe

Ingredients
- 2 eggplants;
- 2 zucchinis;
- 2 tablespoons olive oil;
- 2 cloves garlic;
- 1 teaspoon dried basil;
- 1/2 teaspoon ground black pepper;
- 1 teaspoon salt.
Step-by-step recipe
- Thoroughly wash, then slice the zucchinis and eggplants into rounds about 1 cm thick.
- Press the garlic through a press. Mix it with olive oil, dried basil, ground black pepper, and salt.
- Place the vegetables in a large bowl, pour the aromatic mixture over them, and gently toss.
- After that, arrange the eggplants and zucchinis in a single layer in the air fryer basket.
- Bake them for approximately 18-20 minutes in the air fryer at 190 degrees Celsius. But after 10 minutes, carefully flip them with a spatula.
- Before serving, you can sprinkle the baked vegetables with fresh herbs and chopped garlic.
